Vegan Vegetable Chili
Ingredients:
- 1/2 Pack Smart Ground Lightlife (Lightlife Vegan Smart Ground)
- 1 Whole White Onion
- 2 Large Carrots
- 1 Medium Zucchini
- 10 Bella Mushrooms
- 1 Jalapeno
- 2 8 oz cans Diced Tomatoes
- 1 8 oz can Tomato Sauce
- 1 8 oz can Black Beans
- 1 8oz can Red Kidney Beans
- 1 Tablespoon Garlic Powder
- 1 Tablespoon Onion Powder
- 2 Teaspoons Salt
- 2 Teaspoons Chili Powder
- 1 Teaspoon Cayenne Pepper
- 1 Teaspoon Pepper
- 1 Tablespoon Olive/Avocado Oil
Garnish: Avocados and cilantro
- In a large pot over medium heat add oil, chopped onions and chopped zucchini.
- Grate in carrots, chopped mushrooms and diced jalapeno (leave the seeds if you like it a little more spicy).
- Add in lightlife smart ground and mix well. Saute all the veggies for 5 minutes.
- Rinse both beans and add to pot.
- Add in diced tomatoes and tomato sauce.
- Then add in the rest of the seasonings. Mix well and lower the heat to a simmer.
- Stir every 3 to 5 minutes for 20 minutes.
- Garnish and enjoy 🙂
