Vegan Vegetable Chili

  1. Prepare Vegetables:
    • In a large pot over medium heat, add olive or avocado oil. Sauté chopped onions and zucchini until translucent.
  2. Add Vegetables:
    • Grate carrots and add them to the pot along with chopped mushrooms and diced jalapeno (seeds included for extra spice).
  3. Cook Smart Ground:
    • Add Lightlife Smart Ground to the pot and mix well with the vegetables. Sauté for about 5 minutes until vegetables are slightly tender.
  4. Incorporate Beans and Tomatoes:
    • Rinse black beans and red kidney beans, then add them to the pot.
    • Pour in diced tomatoes and tomato sauce.
  5. Season and Simmer:
    • Stir in garlic powder, onion powder, salt, chili powder, cayenne pepper, and black pepper. Mix well.
    • Reduce heat to a simmer and cook for 20 minutes, stirring occasionally.
  6. Garnish and Serve:
    • Once the chili is ready, garnish with sliced avocados and fresh cilantro.
    • Serve hot and enjoy this delicious vegan chili!
