Vegan Vegetable Chili
Ingredients:
- 1/2 Pack Smart Ground Lightlife ((Lightlife Vegan Smart Ground)
- 1 Whole White Onion
- 2 Large Carrots
- 1 Medium Zucchini
- 10 Bella Mushrooms
- 1 Jalapeno
- 2 8 oz cans Diced Tomatoes
- 1 8 oz can Tomato Sauce
- 1 8 oz can Black Beans
- 1 8 oz can Red Kidney Beans
- 1 Tablespoon Garlic Powder
- 1 Tablespoon Onion Powder
- 2 Teaspoons Salt
- 2 Teaspoons Chili Powder
- 1 Teaspoon Cayenne Pepper
- 1 Teaspoon Pepper
- 1 Tablespoon Olive Oil or Avocado Oil
Garnish:
- Avocados
- Fresh cilantro
Instructions:
- Prepare Vegetables:
- In a large pot over medium heat, add olive or avocado oil. Sauté chopped onions and zucchini until translucent.
- Add Vegetables:
- Grate carrots and add them to the pot along with chopped mushrooms and diced jalapeno (seeds included for extra spice).
- Cook Smart Ground:
- Add Lightlife Smart Ground to the pot and mix well with the vegetables. Sauté for about 5 minutes until vegetables are slightly tender.
- Incorporate Beans and Tomatoes:
- Rinse black beans and red kidney beans, then add them to the pot.
- Pour in diced tomatoes and tomato sauce.
- Season and Simmer:
- Stir in garlic powder, onion powder, salt, chili powder, cayenne pepper, and black pepper. Mix well.
- Reduce heat to a simmer and cook for 20 minutes, stirring occasionally.
- Garnish and Serve:
- Once the chili is ready, garnish with sliced avocados and fresh cilantro.
- Serve hot and enjoy this delicious vegan chili!
