Vegan Vegetable Chili

 

Ingredients:

Garnish: Avocados and cilantro

 

  1. In a large pot over medium heat add oil, chopped onions and chopped zucchini.
  2. Grate in carrots, chopped mushrooms and diced jalapeno (leave the seeds if you like it a little more spicy).
  3. Add in lightlife smart ground and mix well. Saute all the veggies for 5 minutes.
  4. Rinse both beans and add to pot.
  5. Add in diced tomatoes and tomato sauce.
  6. Then add in the rest of the seasonings. Mix well and lower the heat to a simmer.
  7. Stir every 3 to 5 minutes for 20 minutes.
  8. Garnish and enjoy 🙂
