Vegan Muddy Buddies
- Ingredients:
- 1 Box Rice Chex (or any gluten-free Chex alternative)
- 16 oz organic peanut butter
- 10 oz vegan chocolate chips
- 3 cups powdered sugar
- 1 teaspoon olive or vegetable oil
- 2 gallon-sized ziplock bags
Instructions:
- Heat oil in a large pot over medium heat.
- Add peanut butter and chocolate chips to the pot, stirring constantly until fully melted, about 2 to 3 minutes.
- Remove from heat and add Chex cereal to the pot in batches, stirring to coat each batch evenly with the peanut butter-chocolate mixture.
- Divide the coated Chex mixture evenly between the two ziplock bags.
- Add 1 1/2 cups of powdered sugar to each bag.
- Seal the bags, leaving a small opening, and blow air into them to fill them up. Then seal them completely and shake vigorously to coat the muddy buddies with powdered sugar.
- Repeat the process for the second bag.
- Place the bags in the freezer for at least 2 hours before serving. Store in the freezer and enjoy cold!
