Orzo Pasta with Roasted Vegetables and Pesto
Ingredients:
- 1 16 oz box of Orzo Pasta
- 1 Cup Cherry Tomatoes
- 1 Cup Golden Cherry Tomatoes
- 2 Medium Zucchinis
- 4 Garlic Cloves
- 3/4 to 1 Cup Pesto
- 1/2 Cup Parmesan Cheese
- 2 Teaspoons Garlic Powder
- 1 Teaspoon Salt
- 1 Teaspoon Pepper
- 2 Tablespoons Olive Oil
Instructions:
- Preheat oven to 375°F.
- Chop the zucchini into small inch-size cubes and slice the garlic into pieces. Place them on a baking sheet along with whole cherry tomatoes. Drizzle olive oil and sprinkle with garlic powder, salt, and pepper. Bake for 25 to 30 minutes.
- In a pot, boil water and cook orzo according to package instructions.
- Drain the water from the orzo and transfer it to a large serving bowl or dish. Add the roasted vegetables and pesto. Mix well.
- Top with grated Parmesan cheese and serve hot.
