Orzo Pasta with Roasted Vegetables and Pesto



  • 1 16 oz box of Orzo Pasta
  • 1 Cup Cherry Tomatoes
  • 1 Cup Golden Cherry Tomatoes
  • 2 Medium Zucchinis
  • 4 Garlic Cloves
  • 3/4 to 1 Cup Pesto
  • 1/2 Cup Parmesan Cheese
  • 2 Teaspoons Garlic Powder
  • 1 Teaspoon Salt
  • 1 Teaspoon Pepper
  • 2 Tablespoons Olive Oil


  1. Preheat oven to 375°F.
  2. Chop the zucchini into small inch-size cubes and slice the garlic into pieces. Place them on a baking sheet along with whole cherry tomatoes. Drizzle olive oil and sprinkle with garlic powder, salt, and pepper. Bake for 25 to 30 minutes.
  3. In a pot, boil water and cook orzo according to package instructions.
  4. Drain the water from the orzo and transfer it to a large serving bowl or dish. Add the roasted vegetables and pesto. Mix well.
  5. Top with grated Parmesan cheese and serve hot.
