Orzo Pesto Garden Pasta
Ingredients:
- 1 16 oz box of Orzo Pasta
- 1 Cup Cherry Tomatoes
- 1 Cup Golden Cherry Tomatoes
- 2 Medium Zucchinis
- 4 Garlic Cloves
- 3/4 to 1 Cup Pesto
- 1/2 Cup Parmesan Cheese
- 2 Teaspoons Garlic Powder
- 1 Teaspoon Salt
- 1 Teaspoon Pepper
- 2 Tablespoons Olive Oil
- Preheat oven to 375F
- Chop the zucchini into small inch size cubes, and slice the garlic into pieces. Add both to a cookie sheet. Add whole cherry tomatoes on top. Drizzle olive oil, garlic powder, salt and pepper. bake for 25 to 30 minutes.
- Boil water and cook orzo according to package.
- Drain the water from the orzo and place in a large serving bowl or dish. Add pesto and vegetables. Top with parmesan and enjoy!
