Peanut Butter Cup and Chocolate Chip Cheesecake Bars
Ingredients:
- 2 Packages of Oreo Cookies (two single tube packages)
- 1/2 Cup Melted Butter
- 3 8oz Blocks of Cream Cheese
- 3/4 Cup Sugar
- 3 Eggs
- 2 Teaspoons Vanilla Extract
- 1/2 Cup Chocolate Chips
- 1/2 Cup Mini Peanut Butter Cups
Instructions:
- Preheat Oven and Prepare Baking Dish:
- Preheat your oven to 325°F.
- Line a 9×13 baking dish with parchment paper.
- Prepare Oreo Crust:
- Scrape the filling out of the Oreo cookies. Place the cookies in a food processor and add melted butter.
- Pulse on high until well combined.
- Press the Oreo crust mixture into the bottom of the prepared baking dish, forming an even layer. Bake for 10 minutes.
- Prepare Cream Cheese Mixture:
- In a large bowl, beat the cream cheese on high until soft and creamy.
- Add sugar and mix until well combined.
- Beat in the eggs one at a time, followed by the vanilla extract.
- Fold in Mix-ins:
- Using a large spatula, gently fold in the chocolate chips and mini peanut butter cups into the cream cheese mixture. Reserve some for topping before baking.
- Bake:
- Pour the cream cheese mixture over the baked Oreo crust.
- Sprinkle the reserved chocolate chips and mini peanut butter cups on top.
- Bake for 40 minutes or until set.
- Cool and Refrigerate:
- Allow the cheesecake bars to cool in the pan for 20 minutes before transferring to the refrigerator.
- Refrigerate for at least 4 hours, preferably overnight, before serving.
