Peanut Butter Cup and Chocolate Chip Cheesecake Bars

 

Ingredients:

  • 2 Packages of Oreo Cookies (two single tube packages)
  • 1/2 Cup Melted Butter
  • 3 8oz Blocks of Cream Cheese
  • 3/4 Cup Sugar
  • 3 Eggs
  • 2 Teaspoons Vanilla Extract
  • 1/2 Cup Chocolate Chips
  • 1/2 Cup Mini Peanut Butter Cups

Instructions:

  1. Preheat Oven and Prepare Baking Dish:
    • Preheat your oven to 325°F.
    • Line a 9×13 baking dish with parchment paper.
  2. Prepare Oreo Crust:
    • Scrape the filling out of the Oreo cookies. Place the cookies in a food processor and add melted butter.
    • Pulse on high until well combined.
    • Press the Oreo crust mixture into the bottom of the prepared baking dish, forming an even layer. Bake for 10 minutes.
  3. Prepare Cream Cheese Mixture:
    • In a large bowl, beat the cream cheese on high until soft and creamy.
    • Add sugar and mix until well combined.
    • Beat in the eggs one at a time, followed by the vanilla extract.
  4. Fold in Mix-ins:
    • Using a large spatula, gently fold in the chocolate chips and mini peanut butter cups into the cream cheese mixture. Reserve some for topping before baking.
  5. Bake:
    • Pour the cream cheese mixture over the baked Oreo crust.
    • Sprinkle the reserved chocolate chips and mini peanut butter cups on top.
    • Bake for 40 minutes or until set.
  6. Cool and Refrigerate:
    • Allow the cheesecake bars to cool in the pan for 20 minutes before transferring to the refrigerator.
    • Refrigerate for at least 4 hours, preferably overnight, before serving.
