Healthy Turkey Meatballs with Zucchini Noodles Recipe

Ingredients:

  • 6 Medium to Large Zucchinis, spiraled-  Zoodle Spiral Product 
  • 2 Cans Tomato Sauce
  • 16 oz Ground Turkey
  • 1 Tablespoon Olive Oil

Turkey Meatball Seasoning:

  • 1 Tablespoon Garlic Powder
  • 1 Tablespoon Onion Powder
  • 2 Teaspoons Red Chili Pepper Flakes
  • 2 Teaspoons Black Pepper
  • 1 Teaspoon Cayenne Pepper
  • 1 Teaspoon Salt

Tomato Sauce Seasoning:

  • 2 Tablespoons Fresh or Dried Oregano
  • 2 Tablespoons Fresh or Dried Basil
  • 2 Tablespoons Parsley
  • 1 Whole Yellow Onion, sautéed
  • 3 Garlic Cloves, sautéed
  • 1 Tablespoon Olive Oil

Instructions:

  1. Preheat the Oven: Set your oven to 375°F.
  2. Prepare Zucchini Noodles: Use a spiralizer to turn the zucchini into noodles. Set the noodles aside in a bowl.
  3. Mix Meatball Ingredients: In a large bowl, combine the ground turkey with the meatball seasonings. Lightly oil your hands and form the mixture into 1 1/2 inch meatballs. Arrange the meatballs on a baking sheet lined with parchment paper.
  4. Bake Meatballs: Cook in the preheated oven for 25 minutes or until browned and cooked through.
  5. Prepare the Sauce: In a large skillet, heat a tablespoon of olive oil over medium heat. Add the onion and garlic, sautéing until translucent. Stir in the herbs for a minute before adding the tomato sauce. Let simmer for 2 minutes, then transfer to a blender and blend until smooth.
  6. Cook Zucchini Noodles: In the same skillet, sauté the zucchini noodles for 3-5 minutes until tender.
  7. Combine and Serve: Add the turkey meatballs and tomato sauce to the zoodles. Toss to combine and heat through. Serve in Annieglass Platinum Bowls for an elegant presentation.
