Savory Tofu Scramble

Serves: 2 to 4


  • 1 Package of Firm Tofu
  • 1/2 Cup Nutritional Yeast
  • 1/3 of a Small Yellow or White Onion, chopped
  • 8 Bella Mushrooms, sliced
  • 1/2 Jalapeño or 1 Teaspoon Red Chili Pepper Flakes, finely chopped
  • 1 Small Red Tomato, diced
  • 1 Avocado, diced
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Black Pepper
  • 1/2 Teaspoon Salt
  • 2 Tablespoons Olive Oil
  • Optional: English Muffin or Tortilla, and Sriracha for topping


  1. In a medium pan over medium heat, heat olive oil and sauté chopped onions until lightly golden brown.
  2. Add sliced mushrooms to the pan and sauté for 1 to 2 minutes.
  3. Cut the tofu into four equal pieces. Crumble each piece into the pan using your hands, creating small crumbles.
  4. Sprinkle nutritional yeast, black pepper, salt, garlic powder, and chopped jalapeño or red pepper flakes over the tofu. Cook for 5 to 8 minutes, stirring constantly.
  5. Add the diced tomato and avocado to the pan, and stir to combine.
  6. Optional: Top the tofu scramble with sriracha sauce and serve on a toasted buttered English muffin or wrapped in a tortilla for a delicious breakfast burrito.
