Savory Tofu Scramble
Serves: 2 to 4
Ingredients:
- 1 Package of Firm Tofu
- 1/2 Cup Nutritional Yeast
- 1/3 of a Small Yellow or White Onion, chopped
- 8 Bella Mushrooms, sliced
- 1/2 Jalapeño or 1 Teaspoon Red Chili Pepper Flakes, finely chopped
- 1 Small Red Tomato, diced
- 1 Avocado, diced
- 1 Teaspoon Garlic Powder
- 1 Teaspoon Black Pepper
- 1/2 Teaspoon Salt
- 2 Tablespoons Olive Oil
- Optional: English Muffin or Tortilla, and Sriracha for topping
Instructions:
- In a medium pan over medium heat, heat olive oil and sauté chopped onions until lightly golden brown.
- Add sliced mushrooms to the pan and sauté for 1 to 2 minutes.
- Cut the tofu into four equal pieces. Crumble each piece into the pan using your hands, creating small crumbles.
- Sprinkle nutritional yeast, black pepper, salt, garlic powder, and chopped jalapeño or red pepper flakes over the tofu. Cook for 5 to 8 minutes, stirring constantly.
- Add the diced tomato and avocado to the pan, and stir to combine.
- Optional: Top the tofu scramble with sriracha sauce and serve on a toasted buttered English muffin or wrapped in a tortilla for a delicious breakfast burrito.
