  1. Prepare the Tofu:
    • Heat 1/2 cup of vegetable oil in a cast iron or large pan over medium heat.
    • Drain and cut the tofu into 1-inch cubes.
    • In a small bowl, combine cornstarch, garbanzo bean flour, garlic powder, and salt.
    • Coat the tofu cubes thoroughly with the flour mixture.
    • Fry the tofu in the hot oil, turning frequently, until all sides are golden and crispy. Remove and set aside.
  2. Make the Orange Sauce:
    • In a small pot, combine sugar, ginger, minced garlic, rice vinegar, liquid aminos, red pepper flakes, orange juice, and orange zest. Stir over medium-low heat.
    • Whisk in 1 tablespoon of cornstarch. If the sauce does not thicken to a syrup-like consistency, whisk in an additional tablespoon of cornstarch.
    • Cook, stirring constantly, for 1-2 minutes until the sauce reaches the desired thickness.
  3. Combine and Serve:
    • Pour the orange sauce over the crispy tofu.
    • Garnish with additional orange zest and optional sliced leeks or green onions.
    • Serve the orange tofu hot, ideally over a bed of steamed rice for a complete meal.
