Grilled and Steamed Artichoke Recipe
Serves: 4 to 6
Ingredients:
- 2 Large Artichokes
- 3 Cups Water
- 1 Tablespoon Vegetable Bouillon (I recommend using bouillon for enhanced flavor)
- 1 Lemon
- 3 Garlic Cloves
- 1 Stick of Butter (1/2 cup)
Instructions:
- Prepare the Artichokes: Begin by cutting each artichoke in half.
- Steam the Artichokes: In a large steamer pot, combine 3 cups of water with the vegetable bouillon. Place the artichokes in the steamer, cut side down. Cover and steam for about one hour, or until the artichokes are tender.
- Preheat the Grill: While the artichokes are steaming, get your BBQ grill heated up to a medium/high temperature.
- Prepare Garlic Butter Sauce: In a small saucepan, melt the butter over medium heat. Add minced garlic to the melted butter and cook briefly until fragrant. Be careful not to let the garlic burn.
- Grill the Artichokes: Once steamed and tender, brush the artichokes with a quarter of the garlic butter mixture. Place them on the grill, cut side down, and grill for about 2 minutes, or until they have nice grill marks.
- Serve with Lemon and Butter: Remove the artichokes from the grill and squeeze fresh lemon juice over them. Serve the grilled artichokes with the remaining garlic butter as a dipping sauce.
