Herbed Turkey Meatballs with Cilantro-Parsley Sauce

Serves: 4 to 6

Ingredients:

For the Turkey Meatballs:

  • 3 lbs organic ground turkey (Fulton Valley Farms recommended)
  • 2 teaspoons black pepper
  • 1 teaspoon red pepper flakes
  • 1 1/2 teaspoons onion powder
  • 1 teaspoon garlic powder
  • 2 teaspoons dried oregano
  • 2 teaspoons salt
  • 2 teaspoons Kinder’s Buttery Steak House seasoning
  • 1 teaspoon smoked paprika

For the Cilantro-Parsley Sauce:

  • 1 bunch fresh cilantro
  • 1 bunch fresh parsley
  • 2 cloves garlic
  • 1 teaspoon red pepper flakes
  • 1/2 cup olive oil
  • Salt and pepper to taste
  • Juice of 1 medium lemon

Instructions:

  1. Preheat the Oven: Set your oven to 375°F (190°C) to prepare for baking.
  2. Prepare Meatballs:
    • In a large mixing bowl, combine ground turkey with all the spices: black pepper, red pepper flakes, onion powder, garlic powder, oregano, salt, Kinder’s seasoning, and smoked paprika.
    • Mix thoroughly until all ingredients are well incorporated.
    • Form the mixture into two-inch balls and arrange them on a baking sheet lined with parchment paper.
  3. Bake the Meatballs:
    • Place the meatballs in the preheated oven and bake for 25 minutes, or until they are cooked through and have a golden-brown exterior.
  4. Make the Sauce:
    • While the meatballs are baking, combine cilantro, parsley, garlic, red pepper flakes, olive oil, salt, pepper, and lemon juice in a blender or food processor.
    • Blend until the sauce reaches a smooth consistency. Add a few teaspoons of water if the sauce is too thick.
  5. Serve:
    • Once meatballs are baked, serve them hot with a generous drizzle of the cilantro-parsley sauce.

Serving Suggestion: These flavorful turkey meatballs paired with a vibrant herbed sauce make for a perfect main dish that can be served with rice, quinoa, or a fresh green salad.
