Fig Crostini Appetizers

Elegant Fig Crostini with Honey Mascarpone and Balsamic Glaze

Servings: 6-8

Ingredients:

  • 1 Baguette (preferably sourdough or French bread)
  • 6 to 8 large figs, any variety
  • 8 oz container of mascarpone cheese
  • 1 1/2 tablespoons honey
  • 4 oz fresh pea shoots
  • 2 to 3 tablespoons balsamic vinaigrette
  • 2 tablespoons balsamic glaze

Instructions:

  1. Preheat the Oven: Set your oven to 350°F to ensure it’s ready for baking.
  2. Prepare the Baguette: Slice the baguette into 2-centimeter-thick pieces. Arrange the slices on a parchment-lined baking sheet, ensuring they do not overlap. Lightly drizzle olive oil over the slices.
  3. Bake the Bread: Place the baking sheet in the oven and bake for 7 to 10 minutes, or until the bread is toasted to your preference.
  4. Prepare the Toppings: While the bread is baking, slice each fig into four wedges. In a small bowl, blend the mascarpone with honey until smooth.
  5. Assemble the Crostini: Spread a generous amount of the honey mascarpone mixture on each toasted bread slice. Top each with a fig slice and a small handful of pea shoots.
  6. Add the Final Touches: Drizzle balsamic vinaigrette and balsamic glaze over the assembled crostini just before serving.
