Sheet Pan Maple and Dijon Chicken

Ingredients:

  • 3 Chicken Breast or Thighs
  • 1 Large Sweet Potato
  • 3 Cups Brussel Sprouts

 

Dressing:

  • 2 Tablespoons Dijon Mustard
  • 2 Tablespoons Whole Grain Dijon Mustard
  • 2 Tablespoons Maple Syrup
  • 2 Tablespoons Olive Oil
  • Juice of one Lemon
  • 3 Garlic Minced Garlic Cloves
  • 1 Teaspoon Paprika
  • A pinch of Salt

 

  1. Preheat the oven to 425f
  2. On a baking sheet add parchment paper. Peel and cut the sweet potatoes into small one inch cubes and add to the baking sheet.
    Slice the brussel sprouts into quarters and add to the baking sheet. Place the chicken on the baking sheet around the vegetables.
  3. Mix all the ingredients for the dressing and evenly pour over the entire baking dish of veggies and chicken. Bake for 45 minutes or until the chicken is cooked thoroughly.
