Sheet Pan Maple and Dijon Chicken



  • 3 Chicken Breasts or Thighs
  • 1 Large Sweet Potato
  • 3 Cups Brussels Sprouts

Dijon Maple Dressing:

  • 2 Tablespoons Dijon Mustard
  • 2 Tablespoons Whole Grain Dijon Mustard
  • 2 Tablespoons Maple Syrup
  • 2 Tablespoons Olive Oil
  • Juice of one Lemon
  • 3 Minced Garlic Cloves
  • 1 Teaspoon Paprika
  • A pinch of Salt


  1. Preheat the Oven: Preheat your oven to 425°F.
  2. Prepare the Ingredients: Line a baking sheet with parchment paper. Peel and cube the sweet potato into one-inch pieces, and slice the Brussels sprouts into quarters. Arrange them on the baking sheet along with the chicken pieces.
  3. Make the Dressing: In a small bowl, combine Dijon mustard, whole grain Dijon mustard, maple syrup, olive oil, lemon juice, minced garlic cloves, paprika, and a pinch of salt. Mix well until the dressing is smooth and evenly blended.
  4. Coat with Dressing: Pour the prepared dressing over the chicken and vegetables on the baking sheet, ensuring they are evenly coated.
  5. Bake: Place the baking sheet in the preheated oven and bake for 45 minutes or until the chicken is thoroughly cooked and the vegetables are tender and caramelized.
