Homemade Roasted Garden Salsa Recipe

Servings: 6-8

Ingredients:

  • 15 medium ripe tomatoes
  • 2-4 jalapeños, adjusted according to spice preference
  • 1 bulb of garlic, roasted Roasted Garlic
  • 1 whole red onion
  • Salt and pepper, to taste
  • 3 tablespoons vegetable oil

Instructions:

  1. Prepare the Garlic: Begin by preheating your oven. Roast the garlic until golden and soft, enhancing the flavor of your salsa.
  2. Roast the Tomatoes: Heat 1 tablespoon of vegetable oil in a large grill pan or skillet over medium-high heat. Slice the tomatoes in half and place them cut-side down in the pan. Roast the tomatoes, turning occasionally, until each side is well-charred, about 3 to 5 minutes. Transfer the roasted tomatoes to a large blender and set aside.
  3. Grill the Jalapeños: Add another tablespoon of oil to the pan. Halve the jalapeños lengthwise and place them cut-side down in the pan. Grill for 3 to 5 minutes, turning occasionally until they are also well-charred. Add the grilled jalapeños to the blender.
  4. Combine Ingredients: Roughly chop the red onion into large chunks and add to the blender along with the roasted garlic. Season with salt and pepper to taste.
  5. Blend the Salsa: Blend all ingredients until smooth or to your desired consistency. Adjust seasoning if necessary.
