Homemade Roasted Garden Salsa Recipe
Servings: 6-8
Ingredients:
- 15 medium ripe tomatoes
- 2-4 jalapeños, adjusted according to spice preference
- 1 bulb of garlic, roasted Roasted Garlic
- 1 whole red onion
- Salt and pepper, to taste
- 3 tablespoons vegetable oil
Instructions:
- Prepare the Garlic: Begin by preheating your oven. Roast the garlic until golden and soft, enhancing the flavor of your salsa.
- Roast the Tomatoes: Heat 1 tablespoon of vegetable oil in a large grill pan or skillet over medium-high heat. Slice the tomatoes in half and place them cut-side down in the pan. Roast the tomatoes, turning occasionally, until each side is well-charred, about 3 to 5 minutes. Transfer the roasted tomatoes to a large blender and set aside.
- Grill the Jalapeños: Add another tablespoon of oil to the pan. Halve the jalapeños lengthwise and place them cut-side down in the pan. Grill for 3 to 5 minutes, turning occasionally until they are also well-charred. Add the grilled jalapeños to the blender.
- Combine Ingredients: Roughly chop the red onion into large chunks and add to the blender along with the roasted garlic. Season with salt and pepper to taste.
- Blend the Salsa: Blend all ingredients until smooth or to your desired consistency. Adjust seasoning if necessary.
