Pomegranate Winter Salad

Salad Ingredients:

  • 16 oz Power Greens (such as a mix of spinach, kale, and chard)
  • 1 Apple, thinly sliced
  • 1 Medium Cucumber, thinly sliced
  • 1 Avocado, sliced or cubed
  • 1/4 Cup Pomegranate Seeds
  • 1/4 Cup Raw Pecans
  • 1/4 Cup Crumbled Goat Cheese

Dressing Ingredients:

  • 3 Tablespoons Pomegranate Juice
  • 1/4 Cup Olive Oil
  • 2 Tablespoons Pure Maple Syrup
  • Juice of 1 Lemon
  • 2 Tablespoons White Balsamic Vinegar
  • 2 Tablespoons Dijon Mustard
  • A Pinch of Salt
