Pomegranate Winter Salad
Ingredients:
- 16 oz Lettuce (I like to use power greens)
- 1 Apple
- 1 Medium Cucumber
- 1 Avocado
- 1/4 Cup Pomegranate Seeds
- 1/4 Cup Raw Pecans
- 1/4 Cup Goat Cheese
Dressing:
- 3 Tablespoons Pomegranate
- 1/4 Cup Olive Oil
- 2 Tablespoons Pure Maple Syrup
- Juice of 1 Lemon
- 2 Tablespoons White Balsamic Vinegar
- 2 Tablespoons Dijon Mustard
- A Pinch of Salt
- Mix all the ingredients of the dressing using a whisk in a small container.
- In a large bowl add the lettuce, sliced cucumber, sliced or cubed avocado, sliced apple, pecans, and pomegranate seeds. Add dressing and mix well then top with goat cheese,.
