Homemade Non-Traditional Pasta Sauce Recipe

Yields: 8 to 10 Mason Jars (12 oz each)

Ingredients:

  • 30 Medium Tomatoes (approximately 100 oz)
  • 1 Large White or Yellow Onion
  • 1 Whole Garlic Bulb
  • 1/2 Cup Fresh Oregano
  • 1 Cup Fresh Basil
  • 2 Tablespoons Salt
  • 2 Tablespoons Garlic Powder
  • 1 Tablespoon Black Pepper
  • 1 Teaspoon Red Pepper Flakes
  • 1 Tablespoon Avocado Oil (or substitute with vegetable oil)

Instructions:

  1. Prepare the Ingredients:
    • Start by heating the avocado oil in a large pot over medium heat. Add chopped onions and sauté until they turn lightly golden brown, about 2 minutes.
    • Incorporate the fresh basil and oregano, stirring well to release their flavors.
  2. Cook the Tomatoes:
    • Quarter the tomatoes and add them to the pot. Allow them to cook down for about 5 minutes, stirring occasionally.
  3. Season the Sauce:
    • Sprinkle in the garlic powder, salt, pepper, and red pepper flakes. Stir to combine all the ingredients evenly.
  4. Simmer to Perfection:
    • Reduce the heat to low, cover the pot with a lid, and let the sauce simmer for 15 to 20 minutes. Stir occasionally to prevent sticking and ensure even cooking. The sauce should start to thicken as it simmers.
  5. Blend the Sauce:
    • Once the sauce has cooled slightly, use an immersion blender to puree the sauce to your desired consistency.
  6. Final Seasoning:
    • Taste and adjust the seasoning with additional salt and pepper if needed.
