Homemade Mini Blackberry Cobblers with Oatmeal Crust

 

Ingredients:

  • 5 – 6 Cups Organic Blackberries
  • 1 Teaspoon Lemon Juice
  • 1 Teaspoon Lemon Zest
  • 3/4 Cup Sugar (if the blackberries are sweeter, use 1/2 cup sugar)
  • 1/2 Teaspoon Ground Cinnamon
  • 1/4 Teaspoon Vanilla Extract
  • 5 Tablespoon All Purpose Flour

Preheat oven to 375 F

  1. Mix blackberries with sugar, lemon zest, lemon juice, cinnamon, extract and flour
  2. Let sit for 30 minutes

 

Oat Meal Crust:

  • 1 Cup Organic Oat Meal
  • 1/3 Cup All Purpose Flour
  • 1/3 Cup Dark or Light Brown Sugar (this batch I used dark)
  • 1/2 Teaspoon Salt
  • 1/2 Cup Butter (slightly melted)

 

  1. Combine oats, flour, sugar and salt.
  2. Pour butter over mixture and mix well.
  3. Firmly press the mixture down on your lightly greased baking dish.
  4. Bake at 375 for 13 to 15 minutes (until crust is lightly brown.

 

Once crust has baked, add the blackberry filling, set oven to 400 and bake cobblers for 30 to 35 minutes. 

 

Oat Meal Cookies for Toppings:

  • 1/3 Cup All Purpose Flour
  • 1/3 Cup Oatmeal (for food processor)
  • 1/3 Cup Oatmeal (whole)
  • 1/3 Cup Butter
  • 1/3 Cup Cane Sugar
  • 1/2 Teaspoon Vanilla Extract
  • 1/4 Teaspoon Baking Powder

Pre heat Oven 375F

  1. Mix Butter and cane sugar and extract with mixer.
  2. In a bullet or food processor, blend 1/3 cup of oatmeal until it is like flour.
  3. Mix oatmeal “flour”, flour, and baking powder to butter mixture and mix well.
  4. Roll dough into a small bowl with the whole oatmeals until covered in oats.
  5. On a cookie sheet covered with parchment papper, shape the dough into any shape and bake for 10 minutes.
  6. Let cool and place on top of cobblers.
