Heirloom Tomato, Cucumber, Basil and Dill Salad
Ingredients:
- 2 Medium Cucumbers
- 2 Medium Tomatoes
- 12 Fresh Basil Leaves
- 1 1/2 Tablespoons Freshly Chopped Dill
Dressing:
- 3 Tablespoons Champagne Vinegar
- 2 Cloves Garlic, Minced
- Pinch of Salt
- 1 Tablespoon Olive Oil
- 1 Tablespoon Lemon Juice
Optional: Finish with a drizzle of thick balsamic glaze.
Instructions:
- Prepare Ingredients:
- Use a mandolin or potato peeler to thinly slice the cucumbers. Dice the tomatoes and finely chop the basil leaves and dill. Place them in a medium-sized bowl.
- Prepare Dressing:
- In a separate bowl, combine champagne vinegar, minced garlic, salt, olive oil, and lemon juice. Mix until well combined.
- Combine Ingredients:
- Pour the dressing over the cucumber, tomato, basil, and dill mixture. Gently toss until evenly coated.
