Heirloom Tomato, Cucumber, Basil and Dill Salad

Ingredients:

  • 2 Medium Cucumbers
  • 2 Medium Tomatoes
  • 12 Fresh Basil Leaves
  • 1 1/2 Tablespoons Freshly Chopped Dill

Dressing:

  • 3 Tablespoons Champagne Vinegar
  • 2 Cloves Garlic, Minced
  • Pinch of Salt
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Lemon Juice

Optional: Finish with a drizzle of thick balsamic glaze.

Instructions:

  1. Prepare Ingredients:
    • Use a mandolin or potato peeler to thinly slice the cucumbers. Dice the tomatoes and finely chop the basil leaves and dill. Place them in a medium-sized bowl.
  2. Prepare Dressing:
    • In a separate bowl, combine champagne vinegar, minced garlic, salt, olive oil, and lemon juice. Mix until well combined.
  3. Combine Ingredients:
    • Pour the dressing over the cucumber, tomato, basil, and dill mixture. Gently toss until evenly coated.
  4. Serve:
    • Optionally, drizzle with a thick balsamic glaze for added flavor and presentation. Serve and enjoy this refreshing salad!
