Healthy Banana Bread
Ingredients:
- 3 large ripe bananas
- 2 eggs
- 1/2 cup honey (or maple syrup)
- 1 teaspoon baking soda
- 2 teaspoons vanilla extract
- 5 tablespoons melted butter or coconut oil
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 2 cups all-purpose flour (or gluten-free flour)
- 1/2 cup chocolate chips (such as Azure Market Chocolate Chips)
Instructions:
- Preheat the oven to 350°F.
- Line a 5×9 baking dish with parchment paper.
- In a mixer, combine the ripe bananas, honey (or maple syrup), and melted butter. Mash the bananas and mix on low speed until well combined.
- Add the eggs and vanilla extract, mixing on low until incorporated.
- Incorporate the salt, baking soda, and cinnamon into the mixture on low speed.
- Gradually add the flour, mixing on low until the batter is smooth and well combined.
- Fold in the chocolate chips until evenly distributed throughout the batter.
- Pour the batter into the prepared baking dish and spread it evenly.
- Bake for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the banana bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
