Organic Turkey and Sweet Potato Tacos with Avocado Lime Sauce
Ingredients:
- 1 40oz Package of Organic Ground Turkey
- 1 8 oz can Organic Black Beans
- 1 Large Organic Sweet Potato
- 8 to 10 Organic Corn Tortillas
- 2 Organic Avocados
- 1 Bunch Fresh Organic Cilantro
- 1/4 Cup and 2 Tablespoons Olive Oil
- 2 Limes
- 2 1/2 Teaspoons Red Pepper Flakes
- 2 Teaspoons Garlic Powder
- 1 Teaspoon Chili Powder
- 3 Teaspoons Salt
- 1 Teaspoon Pepper
Instructions:
- Preheat and Prepare:
- Preheat your oven to 375°F.
- Peel and chop the sweet potato into small 1/2 inch cubes. Drizzle with 1 tablespoon of olive oil, 1 teaspoon of garlic powder, and 1 teaspoon of salt. Mix well and bake for 15 to 20 minutes.
- Cook Ground Turkey:
- In a large pan, heat one tablespoon of olive oil over medium heat. Add the ground turkey to the pan.
- Season the turkey with 1 teaspoon salt, 1 teaspoon pepper, 1 teaspoon chili powder, 2 teaspoons garlic powder, and 2 teaspoons red chili flakes.
- Cook the turkey thoroughly, about 8 to 10 minutes, using a wooden spoon to crumble and mix it as it cooks.
- Warm Black Beans and Tortillas:
- In a separate pot over medium heat, warm up the black beans.
- On a stovetop over low heat, warm both sides of the corn tortillas. Alternatively, you can warm them in the oven or microwave.
- Prepare Avocado Lime Sauce:
- In a blender or bullet, combine 1 and 1/2 avocados, 1 teaspoon salt, 1/2 teaspoon red pepper flakes, half of the bunch of cilantro, juice of two limes, and 1/4 cup of olive oil. Blend until creamy.
- Assemble Tacos:
- Fill each warm tortilla with cooked ground turkey, roasted sweet potato cubes, warm black beans, and a drizzle of avocado lime sauce.
- Garnish with leftover avocado slices and cilantro leaves.
- Serve and Enjoy:
