Gluten-Free Vegan Pad Thai with Romanesco Recipe

  • 4 cakes of Lotus Ramen (gluten-free)
  • 1 container of San-J Peanut Sauce
  • 2 large carrots, shredded
  • 1 head of Romanesco, chopped
  • 4 green onions, sliced
  • 1/2 bunch cilantro, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper (any color), chopped
  • 2 tablespoons olive oil


  1. Prepare the Vegetables:
    • Heat 2 tablespoons of olive oil in a large pan over medium heat.
    • Add the chopped romanesco and sauté for 2 minutes.
    • Incorporate the minced garlic, shredded carrots, and chopped bell pepper.
    • Continue to sauté for an additional 3 minutes, adding half of the sliced green onions towards the end.
  2. Cook the Ramen:
    • Follow the package instructions to cook the Lotus Ramen noodles. Once cooked, rinse and drain thoroughly.
  3. Combine and Season:
    • If your pan is large enough, add the drained noodles directly to the pan with the sautéed vegetables. Otherwise, combine them in a large mixing bowl.
    • Pour 3/4 to the entire container of San-J Thai Peanut Sauce over the noodles and vegetables, depending on your taste preference, and mix well to combine.
  4. Garnish and Serve:
    • Stir in the remaining green onions and chopped cilantro.
    • Serve the Pad Thai warm, enjoying the blend of textures and flavors.


  • Sauce Adjustment: Start with less sauce and gradually add more to suit your flavor preferences and dietary needs.
  • Serving Suggestion: For an extra protein boost, consider adding tofu or chickpeas.
