Gluten-Free Vegan Pad Thai with Romanesco Recipe

Ingredients:
- 4 cakes of Lotus Ramen (gluten-free)
- 1 container of San-J Peanut Sauce
- 2 large carrots, shredded
- 1 head of Romanesco, chopped
- 4 green onions, sliced
- 1/2 bunch cilantro, chopped
- 2 cloves garlic, minced
- 1 bell pepper (any color), chopped
- 2 tablespoons olive oil
Instructions:
- Prepare the Vegetables:
- Heat 2 tablespoons of olive oil in a large pan over medium heat.
- Add the chopped romanesco and sauté for 2 minutes.
- Incorporate the minced garlic, shredded carrots, and chopped bell pepper.
- Continue to sauté for an additional 3 minutes, adding half of the sliced green onions towards the end.
- Cook the Ramen:
- Follow the package instructions to cook the Lotus Ramen noodles. Once cooked, rinse and drain thoroughly.
- Combine and Season:
- If your pan is large enough, add the drained noodles directly to the pan with the sautéed vegetables. Otherwise, combine them in a large mixing bowl.
- Pour 3/4 to the entire container of San-J Thai Peanut Sauce over the noodles and vegetables, depending on your taste preference, and mix well to combine.
- Garnish and Serve:
- Stir in the remaining green onions and chopped cilantro.
- Serve the Pad Thai warm, enjoying the blend of textures and flavors.
