Easy Homemade Fresh Peach Cobbler Recipe

Ingredients

For the Filling:

  • 8-10 fresh peaches, skinned and pitted
  • 1/4 cup melted butter
  • 1/4 cup firmly packed light brown sugar
  • 1/4 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice

For the Topping:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup firmly packed light brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 12 tablespoons chilled butter, cut into pieces
  • 1/2 cup boiling water
  • 1 tablespoon granulated sugar, for sprinkling on top

Directions

  1. Preheat the oven to 400°F (204°C). Pour the melted butter into a large skillet or a 9×13-inch baking dish.
  2. Prepare the Filling: In a medium bowl, combine the sliced peaches, light brown sugar, cinnamon, cornstarch, vanilla extract, and lemon juice. Mix well to coat the peaches evenly. Pour the peach mixture over the melted butter in the skillet or baking dish. Bake for 10 minutes.
  3. Make the Topping: While the filling bakes, in a larger bowl, mix together the flour, granulated sugar, light brown sugar, baking powder, and salt. Cut in the chilled butter until the mixture resembles coarse crumbs. Stir in the boiling water until just combined.
  4. Assemble the Cobbler: Remove the filling from the oven and carefully drop spoonfuls of the topping mixture over the peach filling, spreading evenly to cover the peaches completely.
  5. Bake: Place a baking sheet under your dish to catch any overflow. Sprinkle the additional granulated sugar over the topping. Return to the oven and bake for about 30 minutes, or until the topping is golden brown.
  6. Serve: Enjoy your peach cobbler warm, ideally with a scoop of ice cream for the perfect dessert experience.
