Dark Chocolate Almond Clusters Recipe

Ingredients:

  • 3 cups dark chocolate (or your favorite type of chocolate)
  • 3 cups raw almonds
  • 1/2 tablespoon sea salt

Instructions:

  1. Prepare a Double Boiler: Fill a small to medium pot with about two inches of water and bring to a boil. Place a heat-resistant bowl on top of the pot, ensuring it does not touch the water (maintain about two to three inches of space from the bottom of the pot to the bottom of the bowl). The water should slightly touch the bottom of the bowl.
  2. Melt the Chocolate: Turn the heat down to simmer. Add the dark chocolate to the bowl and stir constantly until completely melted. Turn off the burner once melted; the residual heat will keep the chocolate smooth.
  3. Coat the Almonds: Add the almonds to the melted chocolate one cup at a time, stirring until they are completely covered in chocolate.
  4. Shape the Clusters: Line a cookie sheet with parchment paper. Spread the chocolate-coated almonds onto the parchment, ensuring they are touching. Sprinkle with sea salt.
  5. Freeze: Place the tray in the freezer for 20-30 minutes until the chocolate has set.
  6. Break Into Clusters: Use the end of a wooden spoon or your hands to break the set chocolate into small clusters.
  7. Storage: Store the clusters in a bag or container in the freezer. Enjoy them cold for a refreshing treat!
