Chocolate Peanut Butter Mousse
Serves 2 to 4
Ingredients:
- 8 oz Firm Tofu
- 1 Medium to Large Banana
- 1/4 Cup Cacao Powder
- 3/4 Cup Peanut Butter
- 4 Tablespoons Maple Syrup
- 1/2 Cup Aquafaba (water from chickpea can)
- 1 Teaspoon Lemon Juice
- Add tofu, banana, cacao, peanut butter and maple syrup to a food processor and blend until well combined and smooth.
- Add the aquafaba into a separate bowl with lemon juice and whip with a hand mixer until it begins to peak. About 8 to 10 minutes.
- Fold the peanut mixture into the aquafaba mixture until well combines.
- Place in a container with a lid in the fridge to set over night.
