Creamy Vegan Chocolate Peanut Butter Mousse
Serves: 2 to 4
Ingredients:
- 8 oz Firm Tofu
- 1 Medium to Large Banana
- 1/4 Cup Cacao Powder
- 3/4 Cup Peanut Butter
- 4 Tablespoons Maple Syrup
- 1/2 Cup Aquafaba (chickpea water)
- 1 Teaspoon Lemon Juice
Instructions:
- In a food processor, blend tofu, banana, cacao powder, peanut butter, and maple syrup until smooth and well combined.
- In a separate bowl, whip aquafaba with lemon juice using a hand mixer until it forms stiff peaks, about 8 to 10 minutes.
- Gently fold the peanut mixture into the whipped aquafaba until thoroughly combined.
- Transfer the mixture into a container with a lid and refrigerate overnight to set.
