Creamy Vegan Chocolate Peanut Butter Mousse

Serves: 2 to 4

Ingredients:

  • 8 oz Firm Tofu
  • 1 Medium to Large Banana
  • 1/4 Cup Cacao Powder
  • 3/4 Cup Peanut Butter
  • 4 Tablespoons Maple Syrup
  • 1/2 Cup Aquafaba (chickpea water)
  • 1 Teaspoon Lemon Juice

Instructions:

  1. In a food processor, blend tofu, banana, cacao powder, peanut butter, and maple syrup until smooth and well combined.
  2. In a separate bowl, whip aquafaba with lemon juice using a hand mixer until it forms stiff peaks, about 8 to 10 minutes.
  3. Gently fold the peanut mixture into the whipped aquafaba until thoroughly combined.
  4. Transfer the mixture into a container with a lid and refrigerate overnight to set.
