Chili Queso Dip Recipe with Optional Shredded Chicken

Indulge in this creamy and spicy Chili Queso Dip, perfect for parties or as a hearty snack. Packed with rich flavors and customizable toppings, this dip pairs wonderfully with your favorite tortilla chips.


  • 1 bag of your favorite tortilla chips
  • 2 cans of chili (any variety)
  • 2 (8 oz) packages of cream cheese
  • 3/4 cup shredded cheese (Mexican blend recommended)


  • 1 ripe avocado, diced
  • 1 fresh tomato, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, sliced

Optional: Shredded Chicken

  • 1 chicken breast
  • 1 teaspoon chipotle seasoning
  • 2 tablespoons chili powder
  • 1 teaspoon carne asada seasoning


  1. Prepare the Dip:
    • In a medium-sized pot, combine the chili, cream cheese, and shredded cheese. Cook over medium heat, stirring frequently until the cheese melts and the mixture begins to bubble gently.
  2. Prepare Toppings:
    • While the dip cooks, prepare the toppings: dice the avocado and tomato, chop the red onion, and slice the jalapeño. Set aside.
  3. Optional Shredded Chicken:
    • Preheat your oven to 350°F (175°C).
    • Season the chicken breast with half of the chipotle, chili powder, and carne asada seasoning. Bake for 25-30 minutes or until fully cooked.
    • Once cooked, shred the chicken with two forks and mix in the remaining seasonings.
  4. Assemble the Dip:
    • Pour the hot dip into a serving bowl. Sprinkle the prepared toppings over the dip. If using, add the shredded chicken on top.
    • Serve immediately with tortilla chips for dipping.
