Blonde Chicks (AKA Chickpea Blondies)
Vegan!
Ingredients:
- 1 8 oz can Chickpeas
- 3/4 Cup Peanut Butter (or any preferred nut butter)
- 1/3 Cup Maple Syrup
- 2 Teaspoons Vanilla Extract
- 1/2 Teaspoon Salt
- 1/4 Teaspoon Baking Powder
- 1/4 Teaspoon Baking Soda
- 1/2 Cup Chocolate Chips
Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease an 8×8 baking pan with vegetable oil spray or your preferred oil.
- Prepare Chickpeas:
- Keep the liquid from chickpeas, do not drain.
- Blend Ingredients:
- In a blender, bullet, or food processor, combine the chickpeas (with the liquid), peanut butter, maple syrup, vanilla extract, salt, baking powder, and baking soda. Blend until smooth and well combined.
- Fold in the chocolate chips into the batter until evenly distributed.
- Bake:
- Transfer the batter to the greased baking pan, spreading it evenly.
- Bake in the preheated oven for 17 to 20 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean. Adjust baking time for desired texture (less time for gooey blondies, longer for firmer ones).
- Optional Finishing Touch:
- For an extra flavor boost, sprinkle some sea salt over the top of the blondies before or after baking.
- Enjoy:
- Once baked, allow the blondies to cool in the pan for a few minutes before slicing into squares. Serve and enjoy these delicious and nutritious treats!
