Blonde Chicks (AKA Chickpea Blondies)

Vegan!

Ingredients:

  • 1 8 oz can Chickpeas
  • 3/4 Cup Peanut Butter (or any preferred nut butter)
  • 1/3 Cup Maple Syrup
  • 2 Teaspoons Vanilla Extract
  • 1/2 Teaspoon Salt
  • 1/4 Teaspoon Baking Powder
  • 1/4 Teaspoon Baking Soda
  • 1/2 Cup Chocolate Chips

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease an 8×8 baking pan with vegetable oil spray or your preferred oil.
  2. Prepare Chickpeas:
    • Keep the liquid from chickpeas, do not drain.
  3. Blend Ingredients:
    • In a blender, bullet, or food processor, combine the chickpeas (with the liquid), peanut butter, maple syrup, vanilla extract, salt, baking powder, and baking soda. Blend until smooth and well combined.
    • Fold in the chocolate chips into the batter until evenly distributed.
  4. Bake:
    • Transfer the batter to the greased baking pan, spreading it evenly.
    • Bake in the preheated oven for 17 to 20 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean. Adjust baking time for desired texture (less time for gooey blondies, longer for firmer ones).
  5. Optional Finishing Touch:
    • For an extra flavor boost, sprinkle some sea salt over the top of the blondies before or after baking.
  6. Enjoy:
    • Once baked, allow the blondies to cool in the pan for a few minutes before slicing into squares. Serve and enjoy these delicious and nutritious treats!
