Banana Peanut Butter Muffins

Ingredients:

(Makes 12 mini muffins and about 6 to 9 large muffins)

  • 1 Banana
  • 3/4 Cup Quick Oats
  • 1/3 Cup Peanut Butter (or any preferred nut butter)
  • 1/3 Cup Chocolate Chips
  • 1 Egg (or substitute with 1/3 cup applesauce or a mixture of 2 tablespoons flaxseed and 3 tablespoons water, let the mixture set for 5 minutes before adding to the recipe)
  • 1 Teaspoon Vanilla Extract
  • 1/2 Teaspoon Baking Powder
  • 2 Teaspoons Maple Syrup
  • Drizzle of nut butter on top (optional)

Instructions:

  1. Preheat Oven: Preheat the oven to 375°F (190°C).
  2. Prepare Ingredients:
    • In a mixing bowl, mash the banana until smooth and creamy. Add in the quick oats, peanut butter, egg (or substitute), vanilla extract, baking powder, and maple syrup. Mix well until all ingredients are combined.
    • Gently fold in the chocolate chips until evenly distributed throughout the batter.
  3. Fill Muffin Pan:
    • Lightly spray a muffin pan with oil to prevent sticking. Fill each muffin cup to the top with the batter mixture. If any muffin slots remain empty, fill them with water before baking.
  4. Bake:
    • Place the muffin pan in the preheated oven and bake for 17 to 20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean. Adjust baking time to your desired level of gooeyness.
  5. Enjoy:
    • Once baked, remove the muffins from the oven and let them cool for a few minutes before serving. Optionally, drizzle a little nut butter on top for extra flavor.
