A Spin on Greek Salad 

Ingredients:

  • 1 Large English Cucumber, sliced in half
  • 2 Cups Cherry Tomatoes, chopped (or any preferred variety, halved)
  • 2 Medium-Sized Bell Peppers, preferably yellow, orange, or red, chopped
  • 1/2 Cup Artichoke Hearts, chopped
  • 1/2 Cup Peppercinis, chopped
  • 1/2 Cup Olives, sliced in half lengthwise
  • 1/2 Red Onion, diced
  • 3 Tablespoons Fresh Parsley, finely chopped
  • 2 Tablespoons Fresh Oregano, finely chopped
  • 2 Tablespoons Dijon Mustard
  • 1/4 Cup Red Wine Vinegar
  • 1/8 Cup Olive Oil

Instructions:

  1. Prepare the Salad:
    • In a large bowl, combine all the ingredients: cucumber, cherry tomatoes, bell peppers, artichoke hearts, peppercinis, olives, red onion, parsley, and oregano.
  2. Make the Dressing:
    • In a small bowl, whisk together the Dijon mustard, red wine vinegar, and olive oil until well combined.
  3. Combine Ingredients:
    • Pour the dressing over the salad ingredients in the large bowl.
  4. Toss and Serve:
    • Gently toss the salad until all ingredients are evenly coated with the dressing.
  5. Enjoy:
    • Serve immediately as a refreshing side dish or light lunch option.
