A Spin on Greek Salad
Ingredients:
- 1 Large English Cucumber (sliced in half)
- 2 Cups Chopped Cherry Tomatoes (or any tomatoes you like, I like slicing the tomatoes in half)
- 2 Medium Sized Bell Peppers (preferably yellow orange, or red, chop into small pieces)
- 1/2 Cup Artichoke Hearts (chopped)
- 1/2 Cup Peppercinis (chopped)
- 1/2 Cup Olives (Sliced in half, long ways)
- 1/2 of a Red Onion (diced)
- 3 Tablespoons Fresh Parsley (finely chopped)
- 2 Tablespoons Fresh Oregano (finely chopped)
- 2 Tablespoons Dijon Mustard
- 1/4 Cup Red Wine Vinegar
- 1/8 Cup Olive Oil
- Add all ingredients to a large bowl and mix well. Enjoy 🙂
