A Spin on Greek Salad 

Ingredients:

  • 1 Large English Cucumber (sliced in half)
  • 2 Cups Chopped Cherry Tomatoes (or any tomatoes you like, I like slicing the tomatoes in half)
  • 2 Medium Sized Bell Peppers (preferably yellow orange, or red, chop into small pieces)
  • 1/2 Cup Artichoke Hearts (chopped)
  • 1/2 Cup Peppercinis (chopped)
  • 1/2 Cup Olives (Sliced in half, long ways)
  • 1/2 of a Red Onion (diced)
  • 3 Tablespoons Fresh Parsley (finely chopped)
  • 2 Tablespoons Fresh Oregano (finely chopped)
  • 2 Tablespoons Dijon Mustard
  • 1/4 Cup Red Wine Vinegar
  • 1/8 Cup Olive Oil

 

  1. Add all ingredients to a large bowl and mix well. Enjoy đŸ™‚
