A Spin on Greek SaladÂ
Ingredients:
- 1 Large English Cucumber, sliced in half
- 2 Cups Cherry Tomatoes, chopped (or any preferred variety, halved)
- 2 Medium-Sized Bell Peppers, preferably yellow, orange, or red, chopped
- 1/2 Cup Artichoke Hearts, chopped
- 1/2 Cup Peppercinis, chopped
- 1/2 Cup Olives, sliced in half lengthwise
- 1/2 Red Onion, diced
- 3 Tablespoons Fresh Parsley, finely chopped
- 2 Tablespoons Fresh Oregano, finely chopped
- 2 Tablespoons Dijon Mustard
- 1/4 Cup Red Wine Vinegar
- 1/8 Cup Olive Oil
Instructions:
- Prepare the Salad:
- In a large bowl, combine all the ingredients: cucumber, cherry tomatoes, bell peppers, artichoke hearts, peppercinis, olives, red onion, parsley, and oregano.
- Make the Dressing:
- In a small bowl, whisk together the Dijon mustard, red wine vinegar, and olive oil until well combined.
- Combine Ingredients:
- Pour the dressing over the salad ingredients in the large bowl.
- Toss and Serve:
- Gently toss the salad until all ingredients are evenly coated with the dressing.
- Enjoy:
- Serve immediately as a refreshing side dish or light lunch option.
