Cucumber Salad

Served 4 to 6

Ingredients:

 

  • 6 Small Cucumbers
  • 1 Whole Medium Red Onion Sliced Thin
  • 7 Tablespoons Rice Vinegar
  • 3 Tablespoons Sesame Oil
  • 3 Tablespoons Avocado Oil
  • 1 Tablespoon Coconut Aminos
  • 1 Tablespoon Soy Sauce
  • 2 Garlic Cloves Minced
  • 1 Teaspoon Sugar
  • 1 Teaspoon Freshly Minced Ginger
  • 1/4 Teaspoon Cayenne Pepper
  • Garnish with Green Onion, Cilantro and Sesame Seeds

 

  1. Using a mandolin slice cucumber and red onion on the thinnest setting.
  2. In a large bowl add everything together but the garnishes and mix well. Let marinate for 20 to 30 minutes in the fridge. When ready to serve add garnishes and enjoy 🙂
