Vegan Cauliflower Crust BBQ “Chicken” Pizza with Homemade Sugar Free BBQ Sauce

Serves 3

Ingredients:

Toppings:

  • 2 Jalapeños
  •  1/4 Cup Chopped Fresh Cilantro
  • 3 Large Tomatoes
  • 1/2 Red Onion (thinly sliced)
  • 1 Package Lightlife Plant based “Chicken Tenders” Lightlife

Crust (Makes 3 small pizza crusts):

  • 1 Head of Cauliflower
  • 1/ 4 Cup Nutritional Yeast
  • 3 Tablespoon flaxseed meal + 8 Tbsp water (Mix together/ egg substitute)
  • 2 Tablespoon Almond Flour 
  • 2 Tablespoons Fresh Thyme (or dried)
  • 2 Tablespoons Fresh Oregano (or dried)
  • 1 Teaspoon Salt
  • 1 Teaspoon Pepper

BBQ Sauce:

  • 2 15 oz can of Tomato Sauce
  • 2 Tablespoons Chipotle Seasoning
  • 1 Teaspoon Salt
  • 1 Teaspoon Pepper
  • 1/4 Cup Apple Cider Vinegar
  • 3 Tablespoons White Wine Vinegar
  • 1/4 Teaspoon Cinnamon
  • 1/2 Yellow Onion Chopped up Finely
  • 3 Garlic Cloves Minced
  • 1 Teaspoon Smoked Paprika

Cashew Cheese: 

  • 1 1/2 Cup Cashews (Soaked in boil water for 15 minutes)
  • 3/4 Cup Water
  • 5 Tablespoons Nutritional Yeast
  • 2 Tablespoon Almond Flower
  • 2 Tablespoons Olive Oil
  • 1 Teaspoon Lemon Juice
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Onion Powder
  • Salt to taste (1 Teaspoon)

 

  1. Preheat oven to 375F
  2. Mix 1 1/2 Tablespoon flaxseed meal plus 4 Tbsp water; mix together and let sit for 5 minutes. 
  3. In a large blender add all crust ingredients and blend on high until everything is well combined and mushy. If too dry add 1 more Tablespoon of flaxseed meal (mixture).
  4. On a cookie sheet with parchment paper add 1/3 of the crust mixture and make a circle. Bake for 20  to 25 minutes (if you would like it to be more crispy add 10 more minutes). Repeat this 2 more times. Crust should be slightly bouncy and the ends should be crispy.

BBQ Sauce:

  1. Finely chop the yellow onion and mince the garlic. Add all sauce ingredients to a medium pot and place on medium low heat. Let simmer for 45 minutes to an hour.

Cashew Cheese

  1. In a bullet or blender add all of the cashew cheese ingredients and blend well. Cheese should look a little thicker than cream.

 

  1. Place desired amount of sauce on your cauliflower crust, add chicken, sprinkle clumps of cheese all over, add sliced red onions, chopped tomatoes and jalapeños. Bake for 10 to 15 minutes.
  2. Lastly add desired amount of fresh cilantro.
