Spelt crust, burrata, honey, fig pizza with summer squash

Preheat oven to 400 F

Crust

1 1/3 cup spelt flour

1 teaspoon baking powder

1/2 teaspoon salt

2 tablespoons olive oil

6 tablespoons filtered water

 

 

Mix dry ingredients. Add olive oil, slowly add tablespoons of water, one at a time. Knead dough for 60 seconds.

Let dough sit and cover for 10 to 15 minutes. Prick the crust with a fork. Back for 12 minutes. Then add those yummy toppings! and bake for 15-20 minutes

 

Toppings

Burrata cheese

Sliced figs (doesn’t matter what kind, choose your favorite)

Summer squash, zucchini (sautéd in a sauce pan with olive oil, salt and pepper to taste with a dash of garlic powder)

Sauté some shallots in a saucepan with olive oil until golden brown

Fresh basil

However much honey your heart desires (a drizzle to glob) 😛

 

Spread burrata cheese on (spread light or heavy). Add figs, squash, and shallots to the top of the pizza and bake for 15 to 20 minutes. After baked, add fresh basil and drizzle on the honey to taste.
