Sweet Potato Waffles

Yields 4 waffles


  • 1 cup sweet potato puree (from 3 small sweet potatoes)
  • 1 cup oatmeal
  • 2 eggs
  • 1/2 cup milk (any type)
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder


  1. Preheat the oven to 425°F.
  2. Wash and dry the sweet potatoes, then poke them with a fork. Bake for 45 minutes and let them cool.
  3. Using a blender or food processor, blend the baked sweet potatoes into a smooth puree.
  4. In the blender, combine the sweet potato puree, oatmeal, eggs, milk, cinnamon, and baking powder. Blend until the mixture is smooth.
  5. Turn on your waffle maker and let it heat up. Spray it with avocado oil.
  6. Pour 1/2 cup of batter onto the waffle maker, turn the dial to 6, and let it sit for an additional minute after the beeper goes off.
  7. Enjoy your delicious Sweet Potato Oatmeal Waffles!
