Saucy & Cheesy Scalloped Potatoes
2 to 4 Servings
Ingredients:
- 4 Medium to Large Russet Potatoes
- 1/2 Onion
- 1/2 Shallot
- 2 Garlic Cloves Minced
- 1 1/2 Cups Heavy Whipping Cream
- 1/2 Cup Milk
- 3 Sprigs Fresh Thyme
- Small Bunch of Fresh Chives
- 1 Bay Leaf
- 1 Teaspoon of Salt
- 1/2 Cup Cheddar Cheese
- 1/2 Cup Parmesan Cheese
- 1 Tablespoon of Butter
Baked in my Le Creuset Braiser
- Preheat the oven to 350 F
- Wash potatoes thoroughly.
- Thinly slice your potatoes (I use; https://www.amazon.com/Adjustable-Mandoline-Slicer-Spiralizer-Vegetable/dp/B07FZL4C54?ref_=fsclp_pl_dp_6)
- In a large dutch oven melt butter and sauté the garlic, shallots and onion until lightly golden brown.
- Add potatoes, heavy cream, milk, thyme, chives, and a bay leaf to the sautéd onions; mix well.
- Mix in the cheese and salt over medium heat on your burner for 10 to 15 minutes and then remove bay leaf.
- Close the lid on your dutch oven and bake for 25 to 30 minutes.
