Saucy & Cheesy Scalloped Potatoes

2 to 4 Servings

Ingredients:

  • 4 Medium to Large Russet Potatoes
  • 1/2 Onion
  • 1/2 Shallot
  • 2 Garlic Cloves Minced
  • 1 1/2 Cups Heavy Whipping Cream
  • 1/2 Cup Milk
  • 3 Sprigs Fresh Thyme
  • Small Bunch of Fresh Chives
  • 1 Bay Leaf
  • 1 Teaspoon of Salt
  • 1/2 Cup Cheddar Cheese
  • 1/2 Cup Parmesan Cheese
  • 1 Tablespoon of Butter

Baked in my Le Creuset Braiser

  1. Preheat the oven to 350 F
  2. Wash potatoes thoroughly.
  3. Thinly slice your potatoes (I use; https://www.amazon.com/Adjustable-Mandoline-Slicer-Spiralizer-Vegetable/dp/B07FZL4C54?ref_=fsclp_pl_dp_6)
  4. In a large dutch oven melt butter and sauté the garlic, shallots and onion until lightly golden brown.
  5. Add potatoes, heavy cream, milk, thyme, chives, and a bay leaf to the sautéd onions; mix well.
  6. Mix in the cheese and salt over medium heat on your burner for 10 to 15 minutes and then remove bay leaf.
  7. Close the lid on your dutch oven and bake for 25 to 30 minutes.
