Perfect for a light yet satisfying meal, this recipe combines fresh vegetables and herbs with a robust beef patty, all wrapped in crisp butter lettuce.


  • For the Burgers:
    • 16 oz organic grass-fed beef
    • 1 head of butter lettuce, leaves separated
    • 1/2 red onion, half sliced and half finely chopped
    • 2 tomatoes, sliced
    • 1 avocado, sliced
    • 1 teaspoon red pepper flakes
    • 1 teaspoon onion powder
    • 1 teaspoon chili powder
    • Salt and pepper to taste
    • 3 tablespoons oil (for cooking)
  • For the Tahini Aioli:
    • 1/2 cup tahini
    • Juice of 1 lemon
    • 3 tablespoons chopped fresh parsley
    • 6 garlic cloves, minced
    • 1 teaspoon olive oil (for sautéing garlic)
    • Salt and pepper to taste


  1. Prepare the Aioli:
    • In a small pan, heat 1 teaspoon of olive oil over medium heat. Add minced garlic and sauté until golden brown, about 3 minutes. Remove from heat and let cool.
    • In a food processor, blend tahini, lemon juice, sautéed garlic, parsley, and salt and pepper until smooth. Set aside.
  2. Make the Burger Patties:
    • In a large bowl, combine ground beef, chopped red onion, half of the sautéed garlic, onion powder, chili powder, red pepper flakes, salt, and pepper. Mix thoroughly.
    • Form the mixture into 4-5 inch wide patties.
  3. Grill the Patties:
    • Preheat your grill to medium heat. Brush the grill with oil.
    • Grill patties for about 2-3 minutes per side for medium-well or adjust time for desired doneness.
  4. Assemble the Burgers:
    • Place each patty on a butter lettuce leaf. Top with tahini aioli, a slice of tomato, avocado, and sliced red onion. Cover with another lettuce leaf.
  5. Serve and Enjoy:
    • Serve immediately for a burst of freshness and robust flavors, making a perfect meal that satisfies without the heaviness of traditional buns.
