Fried Sage Leeks
Ingredients:
1 large Leek
2 eggs
3/4 cup panko
1/4 cup parmesan cheese
1 teaspoon salt
1 teaspoon garlic powder
6-8 chopped fresh sage leaves
1/2 teaspoon chili powder (optional)
2 to 3 tablespoons of avocado/vegetable oil
In a large sauce pan add oil and turn heat to medium.
Slice the large leeks in 1 centimeter size pieces.
In a bowl add two eggs and scramble.
In a separate bowl add panko, salt, garlic, powder, parmesan and chili powder.
Dip leeks into egg and then panko mixture and place into pan of oil; let cook on each side for 3 to 5 minutes and place aside on a paper towel. Repeat until all leeks are golden brown.
Ranch:
1/4 cup veganaise (or mayo of your choice)
1/8 cup milk (milk of your choice)
1 tablespoon dill
1 tablespoon finely chopped chives
1 teaspoon garlic powder
1 teaspoon dried chopped onion
