French Onion Soup with Sourdough Recipe


  • 3 medium onions
  • 2 medium shallots
  • 3 garlic cloves
  • 2 bay leaves
  • 1 bunch of thyme
  • 1 bunch of sage
  • 1 teaspoon of dark brown sugar
  • 2 tablespoons of flour
  • 1 cup of dry white wine
  • 6 cups of beef or vegetable broth
  • Salt and pepper to taste
  • Sourdough bread, sliced and toasted
  • Gruyere cheese, grated


  1. Prepare Ingredients:
    • Thinly slice the onions, shallots, and garlic cloves.
    • Tie the bay leaves, thyme, and sage together with kitchen twine to create a bouquet garni.
  2. Caramelize Onions:
    • In a large pot or Dutch oven, heat olive oil over medium-low heat.
    • Add the sliced onions, shallots, and garlic cloves to the pot. Cook, stirring occasionally, until caramelized and golden brown, about 30-40 minutes.
    • Sprinkle dark brown sugar over the onions and continue cooking for an additional 5 minutes until caramelized.
  3. Make Soup Base:
    • Sprinkle flour over the caramelized onions and cook for 2-3 minutes, stirring constantly.
    • Slowly pour in the dry white wine, scraping any browned bits from the bottom of the pot.
    • Add the bouquet garni and beef or vegetable broth to the pot. Bring to a simmer and cook for 20-25 minutes, allowing the flavors to meld together.
  4. Toast Sourdough Bread:
    • Preheat the broiler in your oven.
    • Place slices of sourdough bread on a baking sheet and toast under the broiler until golden brown and crispy on both sides.
  5. Serve:
    • Remove the bouquet garni from the soup and season with salt and pepper to taste.
    • Ladle the soup into oven-safe bowls. Place a slice of toasted sourdough bread on top of each bowl.
    • Sprinkle grated Gruyere cheese over the bread slices.
    • Place the bowls under the broiler until the cheese is melted and bubbly, about 2-3 minutes.
    • Serve hot, garnished with fresh thyme leaves if desired.
