French Onion Soup with Sourdough
Ingredients:
- 3 medium onions
- 2 medium shallot
- 3 garlic cloves
- 2 bay leaves
- 1 bunch of thyme
- 1 bunch of sage
- 1 teaspoon of dark brown sugar
- 2 tablespoons of flour
- 1 cup of dry white wine
- 8 cups (2 quarts) of vegetable broth
- 1 cup shredded gouda cheese
- 6 tablespoons of butter
1 loaf of bread (I prefer sourdough). Can also use slice sourdough bread (4 to 6 slices)
In a large pot add butter, sliced onion (liked shown in pictures above), shallots, chopped garlic, and brown sugar.
Keep stirring as onions caramelize; takes around 25 minutes; they should be a golden brown color.
After onions have caramelize add thyme and sage. Saute for 3 minutes.
Add in wine, veggie broth and 2 bay leaves.
Mix everything together and let simmer for 10 to 15 minutes, add in salt and pepper to taste.
Preheat oven to 350 F
Slice sourdough and lightly add butter or olive oil; bake for 5 minutes. Lightly sprinkle shredded gouda on the bread and bake another 3 minutes.
Scoop soup mix in oven safe dish, sprinkle gouda on soup and broil for 7- 10 minutes. Add bread to soup and enjoy!
