Chocolate Chip Peanut Butter Bars

Ingredients:

  • 2 Cups Peanut Butter (can use any nut butter)
  • 1 1/2 Cups Almond Flour
  • 1/2 Cup Maple Syrup
  • 1 Teaspoon Vanilla Extract
  • 1 1/2 Cups Chocolate Chips
  • 1 Tablespoon Coconut Oil (I prefer refined)
  • 1 Teaspoon Sea Salt

Instructions:

  1. Prepare Peanut Butter Mixture:
    • In a medium bowl, combine peanut butter, maple syrup, vanilla extract, and 3/4 cup chocolate chips. Mix well until all ingredients are fully incorporated.
  2. Assemble Bars:
    • Line a 9×13 casserole dish with parchment paper. Transfer the peanut butter mixture into the dish and spread it out evenly.
  3. Melt Chocolate:
    • In a small pan over low heat, melt coconut oil and remaining 3/4 cup chocolate chips. Stir constantly until the chocolate is completely melted and smooth.
  4. Add Chocolate Topping:
    • Pour the melted chocolate over the peanut butter mixture in the casserole dish, spreading it evenly. Sprinkle sea salt on top of the chocolate layer.
  5. Chill Bars:
    • Place the dish in the freezer for about 20 minutes, or until the chocolate layer hardens.
  6. Slice and Serve:
    • Once the chocolate has hardened, remove the dish from the freezer and cut the bars into small squares.
  7. Storage:
    • Store the peanut butter chocolate bars in the freezer when not eating to maintain their shape and texture.
