Chocolate Chip Peanut Butter Bars
Ingredients:
- 2 Cups Peanut Butter (can use any nut butter)
- 1 1/2 Cups Almond Flour
- 1/2 Cup Maple Syrup
- 1 Teaspoon Vanilla Extract
- 1 1/2 Cups Chocolate Chips
- 1 Tablespoon Coconut Oil (I prefer refined)
- 1 Teaspoon Sea Salt
Instructions:
- Prepare Peanut Butter Mixture:
- In a medium bowl, combine peanut butter, maple syrup, vanilla extract, and 3/4 cup chocolate chips. Mix well until all ingredients are fully incorporated.
- Assemble Bars:
- Line a 9×13 casserole dish with parchment paper. Transfer the peanut butter mixture into the dish and spread it out evenly.
- Melt Chocolate:
- In a small pan over low heat, melt coconut oil and remaining 3/4 cup chocolate chips. Stir constantly until the chocolate is completely melted and smooth.
- Add Chocolate Topping:
- Pour the melted chocolate over the peanut butter mixture in the casserole dish, spreading it evenly. Sprinkle sea salt on top of the chocolate layer.
- Chill Bars:
- Place the dish in the freezer for about 20 minutes, or until the chocolate layer hardens.
- Slice and Serve:
- Once the chocolate has hardened, remove the dish from the freezer and cut the bars into small squares.
- Storage:
- Store the peanut butter chocolate bars in the freezer when not eating to maintain their shape and texture.
