Fresh Chinese Salad with Homemade Honey Sesame Dressing

Ingredients:
- 1 Head of Red Lettuce
- 1 to 2 Clementines
- 2 Green Onions
- 8 Fresh Edamame Beans (removed from pods)
- 1/8 Cup Raw Cashews
Dressing:
- 2 Garlic Cloves, minced
- 2 Teaspoons Fresh Ginger, minced
- 1 Teaspoon Mustard Powder
- 2 Tablespoons Honey
- 2 Tablespoons Soy Sauce (or aminos)
- 1 Teaspoon Sesame Seeds
- 1/4 Cup Olive Oil
- 1/4 Cup Rice Vinegar
- 1 Tablespoon Sesame Oil
Instructions:
- Wash and dry the red lettuce, then tear it into bite-size pieces.
- Peel and segment the clementines, chop the green onions, and shell the edamame beans.
- In a large bowl, combine the lettuce, clementines, green onions, edamame beans, and cashews.
- In a separate bowl, whisk together the minced garlic, minced ginger, mustard powder, honey, soy sauce, sesame seeds, olive oil, rice vinegar, and sesame oil to create the dressing.
- Drizzle the desired amount of dressing over the salad and toss gently to coat.
