Savory Veggie Breakfast Skillet

Serves: 1 to 2

Note: Adjust ingredients accordingly if using a larger cast iron skillet.


  • 3 Eggs
  • 1/4 Head of Broccoli (approximately 1/2 cup finely chopped broccoli)
  • 1/3 Yellow Onion
  • 1 Potato
  • 2 Teaspoons Garlic Powder
  • 1 Teaspoon Salt
  • 1 Teaspoon Pepper
  • 3 Teaspoons Oil


  1. Preheat your oven to 375°F.
  2. Lightly oil your cast iron skillet using 1 teaspoon of oil.
  3. Wash and cut the potato into small 1 to 2 inch cubes. On a parchment-lined baking sheet, toss the potatoes with 2 teaspoons of oil, garlic powder, salt, and pepper. Mix well and bake for 20 to 25 minutes until tender.
  4. Finely chop the broccoli and onions, then place them in a medium bowl. Once the potatoes are cooked, add them to the bowl with the veggies.
  5. In the same bowl, scramble the 3 eggs and mix with the veggies and potatoes.
  6. Transfer the mixture into the oiled cast iron skillet and bake for 25 minutes or until the eggs are fully cooked.
  7. Serve hot with avocado, tomatoes, and your favorite hot sauce for a delicious and satisfying breakfast skillet.
