Breakfast Vegetable Frittata
Savory Veggie Breakfast Skillet
Serves: 1 to 2
Note: Adjust ingredients accordingly if using a larger cast iron skillet.
Ingredients:
- 3 Eggs
- 1/4 Head of Broccoli (approximately 1/2 cup finely chopped broccoli)
- 1/3 Yellow Onion
- 1 Potato
- 2 Teaspoons Garlic Powder
- 1 Teaspoon Salt
- 1 Teaspoon Pepper
- 3 Teaspoons Oil
Instructions:
- Preheat your oven to 375°F.
- Lightly oil your cast iron skillet using 1 teaspoon of oil.
- Wash and cut the potato into small 1 to 2 inch cubes. On a parchment-lined baking sheet, toss the potatoes with 2 teaspoons of oil, garlic powder, salt, and pepper. Mix well and bake for 20 to 25 minutes until tender.
- Finely chop the broccoli and onions, then place them in a medium bowl. Once the potatoes are cooked, add them to the bowl with the veggies.
- In the same bowl, scramble the 3 eggs and mix with the veggies and potatoes.
- Transfer the mixture into the oiled cast iron skillet and bake for 25 minutes or until the eggs are fully cooked.
- Serve hot with avocado, tomatoes, and your favorite hot sauce for a delicious and satisfying breakfast skillet.
