Oven-Baked Mahi Mahi with Lemon-Caper Sauce

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the Mahi Mahi: In a Dutch oven or an oven-safe baking dish with a lid, coat the bottom with 1 tablespoon of olive oil. Squeeze the juice of 2 lemons over the oil and slice the remaining lemon. Arrange the lemon slices on the bottom of the dish.
  3. Layer the Dish: Place the Mahi Mahi fillets over the lemon slices. Sprinkle minced garlic, chopped parsley, and capers evenly over the fillets. Season with salt and pepper to taste.
  4. Bake the Fish: Cover the dish with its lid and bake in the preheated oven for 10 minutes. After 10 minutes, remove the lid, switch the oven to broil, and broil for an additional 2 to 3 minutes, or until the top begins to golden and the fish flakes easily with a fork.
  5. Prepare the Lemon-Caper Sauce: While the fish bakes, place all sauce ingredients into a blender or food processor. Blend until smooth and creamy.
  6. Finish and Serve: If the fish isn’t fully cooked after broiling, turn off the oven, cover the dish, and let it sit in the residual heat for another 3 to 5 minutes to finish gently. This ensures the fish remains moist and tender. Drizzle the prepared lemon-caper sauce over the cooked Mahi Mahi fillets.
  7. Garnish and Enjoy: Serve the Mahi Mahi immediately, garnished with additional parsley if desired. Perfect for a refreshing and light meal, complemented by the tangy and rich flavors of the lemon-caper sauce.
