Serves 4 to 6

Ingredients:

  • 6 Mahi Mahi Filets
  • 3 Lemons
  • 3 Garlic Cloves
  • 1/4 Cups Fresh Parsley
  • 3 Tablespoons Capers
  • 1 Tablespoon Olive Oil

Sauce:

  • 1 Cup Fresh Lemon Balm (one bunch)
  • 1 Cup Fresh Parsley
  • 2 Garlic Cloves
  • 1 Lemon (for Juice)
  • 1 Tablespoon Apple Cider Vinegar
  • 3 Tablespoon Tahini
  • 1 Tablespoon Olive Oil
  • Salt and Pepper to taste

  1. Preheat oven to 375F
  2. In a dutch oven or baking container with a lid that is oven safe, add one tablespoon olive oil, fresh lemon juice from 2 lemons and slice the third lemon to place on top of mahi mahi; add chopped garlic and mahi mahi filets. Then add on top 1/4 cup fresh parsley and caper; salt and pepper to taste.
  3. Bake for 10 minutes with the lid on. After 10 minutes set oven to broil and broil for 2 to 3 minutes with the lid off. Mahi mahi should be able to flake apart with a fork. If not cooked all the way turn oven off, place lid back on and let it sit in the dutch oven for another 3 to 5 minutes. You don’t want the mahi mahi to be dry.
  4. In a bullet or blender add all sauce ingredients and mix well. Drizzle on top of mahi mahi filets and enjoy 🙂
