Baked Mahi Mahi with Lemon, Capers and Parsley
Serves 4 to 6
Ingredients:
- 6 Mahi Mahi Filets
- 3 Lemons
- 3 Garlic Cloves
- 1/4 Cups Fresh Parsley
- 3 Tablespoons Capers
- 1 Tablespoon Olive Oil
Sauce:
- 1 Cup Fresh Lemon Balm (one bunch)
- 1 Cup Fresh Parsley
- 2 Garlic Cloves
- 1 Lemon (for Juice)
- 1 Tablespoon Apple Cider Vinegar
- 3 Tablespoon Tahini
- 1 Tablespoon Olive Oil
- Salt and Pepper to taste
- Preheat oven to 375F
- In a dutch oven or baking container with a lid that is oven safe, add one tablespoon olive oil, fresh lemon juice from 2 lemons and slice the third lemon to place on top of mahi mahi; add chopped garlic and mahi mahi filets. Then add on top 1/4 cup fresh parsley and caper; salt and pepper to taste.
- Bake for 10 minutes with the lid on. After 10 minutes set oven to broil and broil for 2 to 3 minutes with the lid off. Mahi mahi should be able to flake apart with a fork. If not cooked all the way turn oven off, place lid back on and let it sit in the dutch oven for another 3 to 5 minutes. You don’t want the mahi mahi to be dry.
- In a bullet or blender add all sauce ingredients and mix well. Drizzle on top of mahi mahi filets and enjoy 🙂
