Air Fried Zucchini Chips
Serves 4 to 6
Ingredients:
- 4 Medium Zucchinis
- 4 Eggs
- 1 1/2 to 2 Cups Panko
- 2 Teaspoons Dried or Fresh Parsley
- 1 Teaspoon Garlic Powder
- 1 Teaspoon Smoked Paprika
- 1 Teaspoon Smoked Hickory Salt
- 1/2 Teaspoon Pepper
- (Optional; Add in 1/2 Cup Parmesan Cheese)
Dipping Sauce:
Marinara Sauce
- 1 Cup Marinara Sauce
- 2 Teaspoons Garlic Powder
- 1 Teaspoon Pepper
- 1 Teaspoon Salt
- 1 Teaspoon Parsley
or
Ranch
- 1 Cup Veganaise (or real mayonnaise)
- 3 Tablespoon Dried Dill
- 2 Teaspoons Garlic Powder
For each separate sauce; mix all ingredients together and serve.
- Cut your Zucchini in 1/8 to 1/4 inch round slices. If you like it more crispy do 1/8 and a if you like it little more soft slice it to 1/4 inch.
- In a bowl scramble all four eggs and set aside.
- In a separate bowl add the panko, garlic powder, parsley, smoked paprika, smoked salt and pepper (Optional; add in parmesan) and mix well.
- Dip one zucchini round at a time in the egg wash then in the panko mixture; making sure to cover each side completely.
- Using your Insta Vortex preheat air fryer to 375F. Make sure to place drip pan in the bottom of the cooking chamber. Using the display panel, select “Airfry” then select the temperature to 375F for 12 minutes. Press Start. If you like your zucchini’s a little more thick like me add 15 minutes to the timer.
- When the display panel indicates “Add Food” insert one cooking tray in the top-most position and one tray in the bottom-most position.
- Make sure the zucchinis are not touching each other and are evenly spread out on the trays.
- When the display panel indicates “Turn Food” turn the food over and switch the cooking trays so that the one that was in the top-most position is now in the bottom-most position, and vice-versa.
- Serve with your favorite dipping sauce 🙂
