Serves: 4 to 6

Ingredients:

  • 4 Medium Zucchinis
  • 4 Eggs
  • 1 1/2 to 2 Cups Panko Breadcrumbs
  • 2 Teaspoons Dried or Fresh Parsley
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Smoked Paprika
  • 1 Teaspoon Smoked Hickory Salt
  • 1/2 Teaspoon Pepper
  • (Optional: 1/2 Cup Parmesan Cheese)

Dipping Sauce Options:

  1. Marinara Sauce:
    • 1 Cup Marinara Sauce
    • 2 Teaspoons Garlic Powder
    • 1 Teaspoon Pepper
    • 1 Teaspoon Salt
    • 1 Teaspoon Parsley
  2. Ranch:
    • 1 Cup Veganaise or Real Mayonnaise
    • 3 Tablespoons Dried Dill
    • 2 Teaspoons Garlic Powder

Instructions:

  1. Prepare Zucchini:
    • Slice zucchinis into 1/8 to 1/4 inch rounds, adjusting thickness according to preference.
  2. Prepare Coating:
    • In a bowl, scramble the eggs and set aside.
    • In another bowl, mix panko breadcrumbs, garlic powder, parsley, smoked paprika, smoked hickory salt, pepper, and optional parmesan cheese.
  3. Coat Zucchini:
    • Dip each zucchini round into the egg wash, then coat thoroughly with the panko mixture, ensuring even coverage on both sides.
  4. Air-Fry:
    • Preheat your air fryer to 375°F. Place a drip pan in the bottom of the cooking chamber.
    • Arrange the coated zucchini rounds in a single layer on the air fryer trays, ensuring they are not touching.
    • Air fry at 375°F for 12 minutes. If a thicker texture is desired, add 15 minutes to the timer.
  5. Serve:
    • Once crispy and golden, remove the zucchini rounds from the air fryer.
    • Serve hot with your choice of dipping sauce.
