Crispy Air-Fried Zucchini Rounds

Ingredients:
- 4 Medium Zucchinis
- 4 Eggs
- 1 1/2 to 2 Cups Panko Breadcrumbs
- 2 Teaspoons Dried or Fresh Parsley
- 1 Teaspoon Garlic Powder
- 1 Teaspoon Smoked Paprika
- 1 Teaspoon Smoked Hickory Salt
- 1/2 Teaspoon Pepper
- (Optional: 1/2 Cup Parmesan Cheese)
Dipping Sauce Options:
- Marinara Sauce:
- 1 Cup Marinara Sauce
- 2 Teaspoons Garlic Powder
- 1 Teaspoon Pepper
- 1 Teaspoon Salt
- 1 Teaspoon Parsley
- Ranch:
- 1 Cup Veganaise or Real Mayonnaise
- 3 Tablespoons Dried Dill
- 2 Teaspoons Garlic Powder
Instructions:
- Prepare Zucchini:
- Slice zucchinis into 1/8 to 1/4 inch rounds, adjusting thickness according to preference.
- Prepare Coating:
- In a bowl, scramble the eggs and set aside.
- In another bowl, mix panko breadcrumbs, garlic powder, parsley, smoked paprika, smoked hickory salt, pepper, and optional parmesan cheese.
- Coat Zucchini:
- Dip each zucchini round into the egg wash, then coat thoroughly with the panko mixture, ensuring even coverage on both sides.
- Air-Fry:
- Preheat your air fryer to 375°F. Place a drip pan in the bottom of the cooking chamber.
- Arrange the coated zucchini rounds in a single layer on the air fryer trays, ensuring they are not touching.
- Air fry at 375°F for 12 minutes. If a thicker texture is desired, add 15 minutes to the timer.
- Serve:
- Once crispy and golden, remove the zucchini rounds from the air fryer.
- Serve hot with your choice of dipping sauce.
