Spicy Shrimp Skewers with Homemade Ramen

Serves: 4 to 6

Ingredients:

  • Noodles:
    • 3 packages of A-SHA Tainan Noodles or 3 medium zucchinis for a low-carb alternative (spiraled)
    • 10 cups water
    • 4-6 teaspoons Vegetable Bouillon 
  • Shrimp Skewers:
    • 1 package (16 oz) wild-caught raw shrimp, peeled and deveined
    • 2 tablespoons vegetable oil (for grilling or stovetop cooking)
    • 1 tablespoon Huy Fong Foods Chili Garlic Sauce
    • 1 inch fresh ginger, minced
    • 1 garlic clove, minced
    • Optional: wooden skewers, soaked in water
  • Vegetables and Seasonings:
    • 4 large carrots, chopped
    • 4 inches leek, sliced
    • 1 cup sliced mushrooms
    • 1 bunch fresh spinach
    • 1 bok choy, chopped
    • 3-inch piece fresh ginger, minced
    • 3 garlic cloves, minced
    • 2 tablespoons sesame oil
    • 2 tablespoons rice vinegar
    • Additional 3 tablespoons Huy Fong Foods Chili Garlic Sauce
    • Optional: Fresh Thai chilis, sliced for garnish
  • Eggs:
    • 1 egg per serving

Instructions:

  1. Prepare the Shrimp:
    • In a mixing bowl, combine shrimp with chili garlic sauce, minced ginger, and garlic. Thread onto skewers if using and set aside.
  2. Start the Broth:
    • In a large pot, bring water to a simmer with vegetable bouillon. Adjust seasoning as needed.
  3. Sauté Vegetables:
    • Heat vegetable oil in a large saucepan over medium heat. Add leeks, carrots, and ginger. Sauté until leeks are golden. Incorporate zucchini noodles (zoodles), sesame oil, rice vinegar, and additional chili garlic sauce. Cook for about 3 minutes until tender but still crisp.
  4. Cook Eggs:
    • Boil eggs in a small pot for 7 minutes, starting with cold water for a soft yet set yolk. Cool immediately in ice water, then peel and halve.
  5. Simmer Soup:
    • Add sautéed vegetables to the broth and simmer for 10 minutes. Add spinach and bok choy in the last 2 minutes.
  6. Cook Noodles:
    • Prepare noodles according to package instructions in a separate pot.
  7. Cook Shrimp Skewers:
    • Grill skewers over medium heat for about 3-5 minutes per side or sauté on stovetop until nicely charred and cooked through.
  8. Assemble Bowls:
    • In serving bowls, layer noodles, broth, vegetables, eggs, and shrimp skewers. Garnish with sliced mushrooms and optional Thai chilis.
