Ingredients:

  • 1 1/2 cups peanut butter
  • 2 cups dairy-free dark chocolate chips
  • 3 tablespoons coconut flour
  • 2 tablespoons coconut sugar

Instructions:

  1. Prepare the Truffle Mixture: In a medium bowl, combine peanut butter, 1/2 cup of chocolate chips, coconut flour, and coconut sugar. Mix until well blended.
  2. Chill: Transfer the mixture to the refrigerator and chill for 20 minutes. Once chilled, roll the mixture into small balls, about 2 inches in width, and place them on a cookie sheet lined with parchment paper. Freeze the balls for an additional 10 to 15 minutes.
  3. Melt the Chocolate: While the truffle balls are chilling, prepare a double boiler by boiling 2 cups of water in a small pot. Place a heat-resistant glass bowl over the pot, making sure the bottom doesn’t touch the water. Add the remaining 1 1/2 cups of chocolate chips to the bowl and melt slowly, stirring continuously.
  4. Dip the Truffles: Once the chocolate is melted, dip each truffle ball into the chocolate using a fork to ensure even coating. Place the coated truffles back on the parchment paper. Optionally, sprinkle a pinch of salt on each truffle immediately after coating for enhanced flavor.
  5. Final Chill: Store the truffles in the freezer or refrigerator until ready to serve.
