Savory Sausage Orzo Delight
Ingredients:
- 1 lb spicy or sweet Italian sausage (pick your adventure)
- 1 large leek, thinly sliced
- 1 1/2 cups dried orzo
- 3 cups broth (chicken or veggie — dealer’s choice), more if things get thirsty
- Grated Parmesan (be generous, about 3/4 cup or more)
- 2 teaspoon garlic powder
- 1 teaspoon italian seasoning
- 1 teaspoon red chili flakes, if you’re feeling sassy
- Salt + Pepper
- 2–3 tbsp olive oil
- Spinach, kale, chard, or arugula (optional for a healthy flair)
Instructions:
- Heat a large skillet over medium-high heat and add olive oil. Toss in the sausage and break it up until it’s cooked and crumbly.
- Add the leeks and sauté for 2-3 minutes. Stir in the orzo, and seasonings. Toast for 1 minute.
- Pour in broth, bring it to a boil, then reduce the heat. Cover and simmer for 10-15 minutes, stirring occasionally, add more broth if neccessary.
- Stir in the Parmesan until creamy. If you’re tossing in spinach or arugula, now’s the time.
- Serve in bowls, pile on more Parmesan and enjoy!
