Ground Chicken Pasta Bake
Serves 4
Ingredients:
- 1 lb ground chicken (I’m using Azuluna)
- 8 oz (1 box) protein pasta (Equii)
- 4–6 cups kale, roughly chopped
- 1 shallot, finely chopped
- 16 oz pasta sauce
- 1 cup Parmesan cheese, divided
- 1 tbsp olive oil
- 1 tsp fresh or ground garlic
- ½–1 tsp chili flakes
- ½ tsp black pepper
- Salt, to taste
Directions:
- Preheat your oven to 350°F.
- Cook the pasta according to package instructions; set aside.
- Heat olive oil in a large oven-safe pot over medium heat. Add finely chopped shallots and sauté until fragrant and slightly caramelized.
- Add the ground chicken to the pot and season with garlic, chili flakes, black pepper, and salt. Cook until fully browned.
- Stir in the pasta sauce, kale, ½ cup Parmesan, and the cooked pasta. Mix until well combined.
- Sprinkle the remaining Parmesan cheese on top and bake for 20 minutes, or until bubbly and golden.
- Serve and enjoy!
