Ground Chicken Pasta Bake

Serves 4

Ingredients:

  • 1 lb ground chicken (I’m using Azuluna)
  • 8 oz (1 box) protein pasta (Equii)
  • 4–6 cups kale, roughly chopped
  • 1 shallot, finely chopped
  • 16 oz pasta sauce
  • 1 cup Parmesan cheese, divided
  • 1 tbsp olive oil
  • 1 tsp fresh or ground garlic
  • ½–1 tsp chili flakes
  • ½ tsp black pepper
  • Salt, to taste

Directions:

  1. Preheat your oven to 350°F.
  2. Cook the pasta according to package instructions; set aside.
  3. Heat olive oil in a large oven-safe pot over medium heat. Add finely chopped shallots and sauté until fragrant and slightly caramelized.
  4. Add the ground chicken to the pot and season with garlic, chili flakes, black pepper, and salt. Cook until fully browned.
  5. Stir in the pasta sauce, kale, ½ cup Parmesan, and the cooked pasta. Mix until well combined.
  6. Sprinkle the remaining Parmesan cheese on top and bake for 20 minutes, or until bubbly and golden.
  7. Serve and enjoy!
