1 baguette (sourdough or French bread works best)

6–8 large figs, any variety

8 oz mascarpone cheese

1 ½ tablespoons honey

4 oz fresh pea shoots (or microgreens)

2–3 tablespoons balsamic vinaigrette

2 tablespoons balsamic glaze

Olive oil for drizzling
Instructions

Preheat the Oven
Preheat your oven to 350°F (175°C). -
Prepare the Bread
Slice the baguette into 2 cm (about ¾-inch) thick pieces. Arrange on a parchment-lined baking sheet, making sure they don’t overlap. Drizzle lightly with olive oil. -
Toast
Bake the slices for 7–10 minutes, until golden and crisp to your liking. -
Mix the Mascarpone
While the bread is toasting, stir together the mascarpone and honey in a small bowl until smooth and creamy. -
Slice the Figs
Cut each fig into four wedges. -
Assemble the Crostini
Spread a generous layer of honey mascarpone on each toasted slice of bread. Top with fig wedges and a small handful of pea shoots. -
Finish with Balsamic
Drizzle each crostini with balsamic vinaigrette and balsamic glaze right before serving.
