Creamy Leek & Sage Protein Pasta

Serves 2

Ingredients:

  • 1 box Equii Rigatoni
  • 1 large leek, sliced
  • 4 sprigs fresh sage
  • ½ stick butter (or substitute with coconut oil)
  • ½ cup reserved pasta water
  • ¾ cup crème fraîche
  • ½ cup Parmesan cheese, grated
  • Fresh black pepper, to taste

Instructions:

  1. Cook Pasta: Prepare Equii Rigatoni according to package instructions. Reserve ½ cup of pasta water before draining.
  2. Infuse Sage: In a large pan, melt ⅓ of the butter over medium heat. Add sage leaves and cook until crispy. Remove sage and set aside.
  3. Caramelize Leeks: In the same pan, add 1/2 of what is left of the butter, sliced leeks and cook until they’re golden brown and caramelized. Remove and set aside.
  4. Make the Sauce: Add remaining butter to the pan with fresh cracked black pepper. Stir in the reserved pasta water and crème fraîche, mixing until smooth. Add Parmesan, whisking until the sauce is creamy.
  5. Combine: Add the cooked pasta to the sauce, stirring to coat. Top with caramelized leeks and crispy sage, giving it a final toss.
  6. Serve & Enjoy!
