A classic gin cocktail that’s smooth, balanced, and quietly elegant
The Clover Club cocktail is a timeless gin-based cocktail known for its soft pink color, silky foam, and perfectly balanced flavor. Made with London dry gin, fresh lemon juice, raspberry syrup, and egg white, this classic drink is not too sweet, lightly tart, and incredibly smooth—making it a beautiful choice for Valentine’s Day cocktails, date nights, or cozy evenings at home.
Ingredients
-
2 oz London dry gin
-
½ oz fresh lemon juice
-
½ oz raspberry syrup (homemade or high-quality store-bought)
-
½ oz egg white (about half of one large egg white)
-
Optional: ¼ oz dry vermouth (adds depth and complexity)
Garnish (optional):
-
3 fresh raspberries on a pick
-
Or a lemon twist
Instructions
Step 1: Dry Shake
Add the gin, fresh lemon juice, raspberry syrup, egg white, and optional dry vermouth to a cocktail shaker without ice.
Shake vigorously for about 15 seconds. This “dry shake” helps emulsify the egg white and creates the signature frothy texture.
Step 2: Wet Shake
Add a generous handful of ice to the shaker.
Shake again for 20–30 seconds, until the shaker feels very cold. This chills the drink while maintaining the foam.
Step 3: Strain
Double-strain the cocktail into a chilled coupe glass (or a whiskey glass—rules are flexible 😉) using a fine-mesh strainer to ensure a smooth, silky finish.
Step 4: Garnish & Serve
Garnish with fresh raspberries or a lemon twist.
Serve immediately and enjoy.
Homemade Raspberry Syrup (Optional but Recommended)
Making homemade raspberry syrup gives this cocktail a fresher, brighter flavor and is surprisingly easy.
Ingredients
-
1 cup sugar
-
1 cup water
-
1 cup fresh or frozen raspberries
Instructions
-
Combine sugar and water in a small saucepan over medium heat, stirring until the sugar dissolves.
-
Add raspberries and gently mash as the mixture warms.
-
Bring to a low simmer and cook for about 15 minutes.
-
Remove from heat and let cool.
-
Strain through a fine sieve or cheesecloth to remove seeds and pulp.
-
Store in an airtight container in the refrigerator for up to one month.
Notes on Egg Whites
For safety, use fresh, high-quality or pasteurized egg whites. The acidity from the lemon juice helps stabilize the egg white, creating a safe and velvety texture that softens and balances the drink beautifully.
