Ingredients:
• 4 cups water
• 2–3 tablespoons honey (to taste)
• 3 tablespoons dried lavender
• 4 tablespoons dried chamomile
Equipment:
• Popsicle mold
• Popsicle sticks
• Teapot or medium pot
• Fine strainer (optional)
Instructions:

Heat the Water
In a teapot or medium pot, heat the water over medium heat until it just begins to boil. -
Steep the Herbs
Add the dried chamomile, dried lavender, and honey to the hot water. Stir gently and remove from heat. Let steep for about 5 minutes for a light, floral flavor. For stronger herbal taste, steep up to 10 minutes. -
Strain (Optional)
If you prefer a smooth popsicle, strain out the herbs using a fine strainer. You can also leave small pieces in for a more rustic, herbal look. -
Fill the Popsicle Molds
Carefully pour the infused tea into your popsicle molds, filling just below the top line. -
Add Sticks
Place the lid on the mold and insert popsicle sticks about ¾ of the way down. -
Freeze
Freeze for at least 4 hours, or overnight for best results. -
Unmold & Enjoy
Run warm water over the outside of the mold for a few seconds, then gently pull out your popsicles and enjoy.
Tips & Variations:
• For kids: Use less lavender and more honey for a milder flavor.
• Add lemon: A squeeze of fresh lemon brightens the floral notes.
