Step-by-Step Instructions

1. Mix the Dry Ingredients

In a medium bowl, whisk together:

Set aside.

2. Cream the Butter & Sugars

In a stand mixer or mixing bowl, beat together:

Mix on medium speed for 2–3 minutes until light, fluffy, and creamy.

3. Add Eggs, Vanilla & Applesauce

Add in:

Beat on medium-high for 2 minutes, until pale, airy, and fully emulsified.
This step gives the cookies their signature soft, bakery-style texture.

4. Add Dry Ingredients

Reduce mixer speed to low and slowly add the dry mixture.
Mix until just combined — do not overmix.
Stop once the dough pulls together.

5. Scoop, Roll & Shape

  1. Combine cinnamon + sugar in a small bowl.

  2. Scoop the dough using a cookie scoop.

  3. Roll each dough ball in the cinnamon-sugar mixture.

  4. Place onto a parchment-lined baking sheet.

  5. Using the back of a spoon, gently press the center to create a shallow well.

  6. Add ½–1 teaspoon applesauce into the center for extra moisture and flavor.

This helps the cookie bake evenly and stay soft in the middle.

6. Bake

Bake until the edges are lightly golden and the centers look slightly underbaked — they’ll set as they cool.

7. Melt White Chocolate

In a microwave-safe bowl, combine:

Heat in 20–30 second increments, stirring until smooth and glossy.

8. Coat & Drizzle

Once cookies have cooled completely:

  1. Place a tablespoon of melted white chocolate onto parchment.

  2. Gently press the bottom of the cookie onto the chocolate and wiggle to coat.

  3. Drizzle extra white chocolate across the top for a beautiful finish.

  4. Let set at room temperature or refrigerate to firm quickly.
