I think this would also be delicious with a few toasted pistachios or walnuts sprinkled over the top for crunch, but I actually love keeping this version simple. It lets the grilled grapes, creamy burrata, and Halter Ranch olive oil be the stars of the dish.

Serves: 6–8 as an appetizer

Ingredients

  • 2 bunches seedless red grapes
  • 2 (8 oz) balls fresh burrata
  • 1 rustic sourdough loaf, sliced
  • ¼ cup Halter Ranch Estate Extra Virgin Olive Oil, plus more for grilling
  • Flaky sea salt
  • Freshly cracked black pepper
  • Fresh thyme leaves (optional)
  • Fresh basil leaves (optional)
  • Hot honey (optional, for a touch of sweetness)
  • Balsamic glaze (optional)

Instructions

1. Grill the Grapes

Preheat a wood-fired Santa Maria grill (or a gas grill) to medium-high heat.

Lightly brush the grape clusters with olive oil and place them directly over the fire.

Grill for 3–5 minutes, turning occasionally, until the skins begin to blister and the grapes soften slightly while still holding their shape.

Remove from the grill and let cool for a few minutes before gently removing the grapes from the stems.


2. Toast the Sourdough

Brush both sides of each sourdough slice with olive oil.

Grill or toast until golden with light grill marks and crisp edges.


3. Assemble

Spread the burrata onto a large serving platter or shallow bowl.

Top with the warm grilled grapes.

Generously drizzle with the estate olive oil.

Finish with:

  • Flaky sea salt
  • Fresh cracked pepper
  • Fresh thyme or basil
  • Optional drizzle of hot honey or balsamic glaze

Serve

Arrange the grilled sourdough around the platter.

Serve immediately while the grapes are still slightly warm.
