Nestled among 2,700 acres of rolling vineyards, oak-studded hillsides, wildlife habitat, and breathtaking views, Halter Ranch is far more than a winery. It is a destination built around regenerative organic farming, conservation, hospitality, and unforgettable experiences.
As members for more than six years, we’ve visited Halter Ranch many times, yet every trip reveals something new. This recent stay reminded me why it remains one of our favorite places in California wine country—and why we immediately booked our next family vacation before we even left.
More Than a Winery: The Vision Behind Halter Ranch
At the heart of Halter Ranch is Swiss entrepreneur, philanthropist, and conservationist Hansjörg Wyss.
While many know him for his extraordinary conservation efforts around the world, what he’s created in Paso Robles is equally impressive. Halter Ranch was designed with a philosophy that farming, conservation, hospitality, and community can coexist in harmony.
One of the most remarkable facts about the property is that less than ten percent of the 2,700-acre estate has been developed or farmed. The remaining land has been preserved as wildlife habitat, oak woodland, natural corridors, and protected open space.
As you explore the property, you quickly realize that conservation isn’t simply part of the marketing—it is woven into the identity of the ranch itself.
Regenerative Organic Farming and Soil Health
As someone who gardens extensively at home, I was fascinated by Halter Ranch’s commitment to soil health and sustainable farming practices.

A Winery With Its Own Private Airport
Yes, you read that correctly.
Halter Ranch is home to the world’s only winery with its own private airstrip.
Guests can literally fly directly into wine country and arrive on the property itself.
While that fact alone is impressive, it speaks to the larger vision of Halter Ranch: creating an experience unlike anything else in California wine country.
The Defender Tour: One of the Best Experiences in Paso Robles
One of the highlights of our trip was the famous Defender Tour.
These aren’t ordinary tour vehicles. The Defenders were originally sourced from South Africa, where they were once used as safari vehicles before being brought to Halter Ranch.
The tour takes guests across the estate, stopping at scenic overlooks, conservation areas, historic structures, and hidden corners of the property that most visitors never get to see.
Along the way, we enjoyed wine tastings, charcuterie, incredible views, and fascinating stories about the history of the ranch.
The Defender Tour offers a completely different perspective on Paso Robles wine country—one that goes beyond wine tasting and into the story of the land itself.
Another unexpected experience?
A train.
Halter Ranch features its own railroad experience, allowing guests to travel through vineyards, oak forests, ponds, and conservation areas while enjoying wine and snacks along the way.
There is something magical about slowly winding through thousands of acres of protected landscape with a glass of wine in hand.
It’s one of those experiences that sounds almost too good to be true until you experience it yourself.
The Famous Ancestor Tree
One of the most memorable stops on the property is the Ancestor Tree.
This massive Coast Live Oak is estimated to be more than 700 years old and is considered one of the largest of its kind.
Standing beneath its sprawling canopy is a humbling reminder of how much history exists on this land.
The Ancestor Tree has become one of the iconic landmarks of Halter Ranch and perfectly reflects the property’s commitment to preservation and stewardship.
For this trip, we stayed at the Hunting Lodge.
The lodge is ideal for family gatherings, group trips, holiday celebrations, and wine country retreats.
Each bedroom features its own private bathroom, soaking tub, and outdoor access, creating the perfect balance between gathering together and having personal space.
Some of our favorite moments weren’t part of a tour at all.
They were the simple moments:
Cooking together.
Sharing wine around the table.
Watching the rain fall across the vineyards.
Enjoying coffee in the morning while looking out across the hills.
Those are the moments that stay with you long after the trip is over.
Pairing Incredible Food With Incredible Wine
Of course, no visit to Halter Ranch would be complete without food and wine.
Throughout the weekend we created meals inspired by the wines we were enjoying—from crispy artichokes paired with Picpoul Blanc to fondant potatoes, Beef Bourguignon, wood-fired chicken, burrata with grilled grapes, and grilled peaches paired with dessert wine.
One of my favorite discoveries was learning about Libelle, Halter Ranch’s sparkling wine.
Libelle means “dragonfly” in French and was named in honor of Hansjörg Wyss’s mother, Alice, who collected dragonflies throughout her life.
Her legacy also lives on through Alice, the estate restaurant named in her honor.
It’s these thoughtful details that make Halter Ranch feel personal rather than corporate.

After six years as members, we are still discovering new experiences, new stories, and new reasons to return.
What makes Halter Ranch different isn’t simply the wine.
